Ingredients
- Nonstick cooking spray, for the baking dish
- 4 cups mixed berries (See Cook’s Note)
- 1/4 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- One 15.25-ounce box vanilla cake mix
- 8 tablespoons unsalted butter, cut into cubes
- Vanilla ice cream, for serving
Instructions
- Preheat the oven to 350 degrees F. Spray a 9-inch square baking dish with nonstick cooking spray.
- Combine the berries, sugar, cornstarch, lemon juice and vanilla in a medium bowl. Toss to coat the berries. Pour the mixture into the greased baking dish, then spread the cake mix over the top in an even layer. Scatter the butter cubes over the top. Cover the baking dish with aluminum foil and bake until the top is puffed and golden and the fruit is bubbling, about 40 minutes. Remove the foil and continue baking for 5 minutes more.
- Let the cake cool slightly before scooping and serving with vanilla ice cream.

I took this cake to a Fourth of July cookout. It got rave reviews from everyone! I used a 13.5 oz cake mix because that is what the grocery stores sell. I also used 4 more tablespoons of butter as another reviewer suggested. I kept the oven at 350 degrees, but it took another half hour to brown the entire surface of the cake and for the cake mix to dissolve into the berry mixture. The edges were more brown than the middle and I was afraid that it would be dry on the outer edges. However, it turned out really moist all the way around. I topped it with red sprinkles for a more festive holiday look. People at the 4th of July event who said they have made lots of dump cakes said that this one topped everyone they have made! This is definitely a recipe to keep and to make again and again!
This was so easy and delicious! I used fresh berries and lemon cake mix. The baking took a little longer than it says. I baked it an additional 10 minutes or so covered, then ten uncovered. It paired well with vanilla ice cream but next time I’ll try a berry ice cream. Delicious!

I was SO surprised by this “recipe”! The end result was delicious and its just so easy. Mine had to bake a little longer and the box mix I had in the pantry was 13.5oz, so I just used 7TB butter to modify. Perfect, simple and can be adapted many ways. Keep this one!
I made this today with fresh blueberries, raspberries, blueberries and strawberries. It was AMAZING!!!! I don’t generally make desserts because I don’t eat many sweets but this looked so easy on her show and it was! People try this!!!!!
can I use mixed frozen berries for this recipe?
I was pleasantly surprised as this was pretty yummy (and easy!). Used fresh blueberries and frozen strawberries /blackberries and it turned out fine. Also added toasted sliced almonds on top of ice cream/cake. It is softer than what a cobbler is, so that is different.
YUM! this was quick and easy and totally delicious … similar to a cobbler. any mix of berries will work for this.

My cake never cooked or bubbled despite cooking for 1 hour. Very Sad since fresh fruit is so expensive and I wasted my money.
