Ice cream bars (really!) are the secret ingredient in this gooey cake. Buried in the center of a traditional banana bread batter, they melt as the cake bakes to form a molten core.

Ingredients
- 1 stick (8 tablespoons) unsalted butter, melted, plus more for greasing
- 1 1/4 cups all-purpose flour, plus more for dusting the pan
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground ginger
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 cup mashed banana (from about 2 bananas)
- 1/4 cup sour cream
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 chocolate-coated vanilla ice cream bars, such as Klondike
- Confectioners’ sugar, for dusting
Instructions
- Preheat the oven to 350 degrees F. Butter and lightly flour a 2-quart ramekin or souffle dish and tap out the excess flour. Put the ramekin on a baking sheet.
- Combine the flour, baking powder, baking soda, salt, cinnamon, allspice and ginger in a large bowl. Whisk the butter, granulated sugar, brown sugar, banana, sour cream, eggs and vanilla in a separate large bowl until smooth. Whisk the flour mixture into the banana mixture until just combined.
- Pour 2 1/2 cups of the batter into the ramekin and stack the ice cream bars on top of each other in the middle. Pour the remaining batter around the sides and over the top of the ice cream bars.
- Bake until the cake is set and the center is still jiggly, about 45 minutes. Let the cake cool in the ramekin for 15 minutes. Dust with confectioners’ sugar and scoop out portions with a spoon to serve.

Haven’t made it yet… had one question. Do these need to be served immediately? I’d like to make it for a birthday but I cannot do it rhe day of, so if I made them the night before would they still be okay? Would I need to microwave them before? I’m just worried about the ice cream in the middle, thats all.

This is delicious! Such a unique dessert. I used a 9×9 2 quart dish, and Haagen Dazs Ice Cream squares . The cook time and rest times are precise and perfect. It has a lovely texture, my family and I loved it!
Omg! This is so delicious and so easy to make. Mine came out exactly like the picture. I used an 8×8 2 quart square glass baking dish and it came out perfect.
Followed the recipe to a tee but did not have 8 ramekins so did it in 9x 4 pyrex and turned out perfect! My family raved about it & very easy to make!
