Red Cabbage-Endive Salad

Ingredients

  1. 1/2 cup walnuts
  2. 1 medium shallot, minced
  3. 1 small head red cabbage, shredded
  4. Kosher salt
  5. 2 tablespoons red wine vinegar
  6. 2 tablespoons fresh lemon juice
  7. 1 tablespoon dijon mustard
  8. 1 tablespoon sugar
  9. Freshly ground pepper
  10. 1/4 cup extra-virgin olive oil
  11. 1/4 cup creme fraiche or heavy cream
  12. 2 stalks celery, thinly sliced
  13. 3 heads endive, trimmed

Instructions

  1. Preheat the oven to 350 degrees F. Spread the walnuts on a baking sheet; roast until golden, about 12 minutes. Soak the shallot in cold water, 10 minutes, then drain and rinse. Toss the cabbage with 1 teaspoon salt in a large bowl.
  2. Whisk the vinegar, lemon juice, mustard, sugar and 1/2 teaspoon pepper in another bowl. Gradually whisk in the olive oil, then the creme fraiche. Stir in the celery and shallots. Add to the cabbage and toss. Cover and chill at least 30 minutes or up to 6 hours. Before serving, thinly slice the endive lengthwise and toss with the cabbage mixture; season with salt and pepper. Sprinkle with the nuts.

Loved the dressing. Also loved that there was room to play. Used shredded carrots instead of celery, added a red pepper and used Sunflower seeds toasted in sesame oil instead of walnuts. Great taste and great color.

Two-thumbs up! Colors are gorgeous, veggies a nice change from the usual green cabbage/carrot slaw. Dressing was a wonderful surprise.

Very tasty salad! Great for something different. I served it alongside steak and roasted herbed potatoes (in the middle of winter!, but this would be perfect for a summer side dish. I had to leave out the celery because my husband doesn’t like it, but the rest of the ingredients are perfect together. Nice and crunchy! The toasted walnuts are a must.
