Ingredients

  1. 3 peaches, pitted and cut into eighths
  2. Olive oil, for tossing
  3. 1/2 cup mayonnaise
  4. 3 tablespoons apple cider vinegar
  5. 2 tablespoons honey
  6. 1 teaspoon Dijon mustard
  7. 1 teaspoon salt
  8. 1/4 teaspoon pepper
  9. 1 cup thinly sliced red bell peppers
  10. 1/2 cup thinly shredded cabbage
  11. 1/2 cup shredded carrots
  12. 1/4 cup diced red onions
  13. 2 tablespoons chopped fresh mint

Instructions

  1. Preheat the grill to medium heat. 
  2. Toss the peaches in some oil and grill until charred, about 2 minutes per side. 
  3. In a bowl, mix the mayonnaise, vinegar, honey, mustard, salt and pepper. 
  4. Toss the grilled peaches with the peppers, cabbage, carrots, onions, mint and the dressing. Mix well.
