Fresh and Crispy Slaw

Ingredients

  1. 1 (14-ounce) package coleslaw mix
  2. 1 yellow pepper, seeded and thinly sliced
  3. 1/2 bunch tarragon, leaves removed from stems
  4. 1/2 cup coleslaw dressing
  5. 2 tablespoons Dijon mustard
  6. 1 tablespoon honey
  7. 2 tablespoons poppy seeds
  8. Salt and freshly ground black pepper

Instructions

  1. In a large serving bowl combine the coleslaw mix, yellow pepper and tarragon leaves.
  2. In a small bowl combine the dressing, mustard, honey and poppy seeds. Season with salt and pepper, to taste. Pour over the coleslaw mixture, toss to coat and serve.

Very good! I did not use the yellow pepper or tarragon because I did not have any on hand. I added a little bit of dressing to the mix because I thought that the half cup of dressing was too little. Overall, this was really good!
