Ingredients
- 3 tablespoons unsalted butter
- 1 teaspoon caraway seeds
- 1 medium onion, thinly sliced
- Kosher salt and freshly ground black pepper
- 1 small head red cabbage, cored and thinly sliced
- 1 cup low-sodium chicken stock
- 1/4 cup apple cider vinegar
- 1 tablespoon granulated sugar
- 1 medium Granny Smith apple, finely diced
- 1 tablespoon chopped fresh dill
Instructions
- Melt the butter in a large skillet over medium heat. Add the caraway seeds, onion, 1 tablespoon salt and a few grinds of pepper and cook, stirring occasionally, until the onions are softened, about 5 minutes. Fold in the cabbage and cook until slightly wilted, 2 to 3 minutes. Add the stock, vinegar, sugar, apple, 2 teaspoons salt and a few grinds of pepper and stir to combine. Cover the skillet and cook until the cabbage is completely softened and the liquid is almost completely evaporated, about 20 minutes. Fold in the dill and transfer to a serving bowl.

Reviews
I couldn’t find my usual recipe, and this one had good reviews. I always like bacon in my red cabbage, so I did start with that instead of butter. While it was over all pretty good, I gave it 4 stars as I did find it a bit bland. I added a big splash of balsamic vinegar, some extra sweetener and a dash of allspice and cinnamon. I was happy with the end result.
This is absolutely delicious! It pairs excellent with pork tenderloin. All the components really come together well for a savory side with the slightest sweet touch. We normally don’t like sweet anything, but it was subtle and the whole family (including 6 kids) gobbled it up.
Delicious! It had a great balance and was perfect with pork chops.
This is delicious! It smells sweeter than it actually endsb up. I think next time I might add bacon, or use bacon fat instead of butter, and throw in a splash of red wine vinegar because I really like vinegar.
This is a winner. Even my 10 year old likes it. Have made several times.
Very good, had to substitute fennel seeds and added a little agave as sugar substitute! Pairs nicely with feta to balance sweetness
Wasnt sure how this would turn out with the combination of ingredients but I should never have doubted it would be absolutely delicious!
This is amazing! Lot of flavor and easy to make (my kind of recipe) Fantastic with Brats and German potato salad or with Schnitzel and spatzel. This is a keeper!
Made this tonight, had red cabbage from Misfits Market. My daughter and I enjoyed this recipe. The cabbage was tender and the caraway and cider vinegar flavor was delicious. My husband and son didn’t even give it a try, their loss. Forgot the dill, didn’t miss it.
Everyone loved it!
