Ingredients

  1. 1 cup buttermilk
  2. 3 tablespoons unsalted butter, plus more for the baking dish
  3. 1 tablespoon sugar
  4. 1/4 teaspoon baking soda
  5. One .25-ounce package dry yeast
  6. 3 1/2 cups all-purpose flour
  7. 1 teaspoon salt

Instructions

  1. Heat the buttermilk, butter and sugar in a pot until simmering; whisk in the baking soda, then let cool to lukewarm. Meanwhile, put 1/4 cup lukewarm water in a bowl and stir in the yeast; let stand 5 minutes. Whisk the yeast mixture into the buttermilk mixture.
  2. Whisk the flour and salt together in a large bowl. Add the liquid and mix until a soft dough forms. Knead the dough in the bowl until it comes together and is smooth, about 2 minutes. Cover with plastic wrap and let stand 30 minutes.
  3. Butter a 9-by-13-inch glass baking dish. Divide the dough into 12 pieces and roll each piece into a ball. Arrange the balls in the buttered dish. Lightly cover with plastic wrap and let rise until nearly doubled in size, about 1 1/2 hours.
  4. Preheat the oven to 425 degrees F.
  5. Bake the rolls until puffed and golden brown, about 15 minutes. Serve warm.

Excellent! Second batch: Mixed in grated cheddar cheese with the flour and served warm with a honey/chili compound butter. Amazing.

Excellent rolls they where not dry and a very easy recipe to put together. I did use my stand mixer with the bread hook on it. I think I will to brush butter on the top of the rolls next time.

I tried this recipe twice. The first time the dough did not rise. I realized that 5 minutes was not long enough for the buttermilk mixture to cool to a temperature that wouldn’t kill the yeast. The second time I used a laser thermometer to check the temperature and waited until it was near 110 degrees before adding the yeast mixture. This time they rose as expected.
