Ingredients

  1. 5 pounds turkey breast, ground
  2. 2 ounces garlic powder
  3. 2 ounces onion powder
  4. 2 ounces chopped fresh rosemary
  5. 2 pounds bacon, chopped small
  6. 2 pounds white onion, chopped
  7. 4 ounces brown sugar
  8. 2 ounces honey
  9. 2 ounces maple syrup
  10. 2 ounces balsamic vinegar
  11. 1 ounce jalapeño, chopped
  12. 13 brioche rolls
  13. Dijon mustard, for the sandwiches
  14. Lettuce, for the sandwiches
  15. 13 slices fresh mozzarella

Instructions

  1. For the patties: Place the turkey in a bowl with the garlic and onion powders and rosemary.
  2. Form into thirteen 6-ounce patties.
  3. For the bacon jam: Sauté the bacon until crispy. Add the onions and cook together.
  4. Add the brown sugar, honey, maple syrup, vinegar and jalapeño and simmer 8 to 10 minutes. Chill.
  5. Build: Toast the brioche rolls. Spread with the Dijon mustard. Add the lettuce, patties, 1 slice fresh mozzarella and 2 ounces bacon jam to each.

There’s no way you’re supposed to use 2 oz of chopped rosemary I don’t care how many lbs of turkey you’re using…just seems like way too much….
