Turkey and Zucchini Burgers

Make lean yet juicy burgers by combining ground turkey with grated zucchini and chopped scallion.

Ingredients

  1. 1 pound ground turkey
  2. 3/4 cup finely grated zucchini
  3. 1/4 cup finely grated carrot
  4. 1 teaspoon chili powder
  5. 1/2 teaspoon ground coriander
  6. 1/2 teaspoon ground cumin
  7. 4 scallions, white and green parts, chopped
  8. 1 clove garlic, finely grated
  9. Kosher salt and freshly ground black pepper
  10. 1 tablespoon extra-virgin olive oil
  11. 4 seeded hamburger buns, split and toasted
  12. Lettuce, mustard, thinly sliced red onion and pickle spears, for serving

Instructions

  1. Combine the turkey, zucchini, carrot, chili powder, coriander, cumin, scallions, garlic, 1 teaspoon salt and a few grinds of pepper in a large bowl until well blended. Form into four 1/2-inch-thick patties and brush both sides of each with the oil.
  2. Heat a large nonstick skillet over medium heat. Add the patties and cook, flipping once, until browned on the outside and cooked through, 5 to 8 minutes per side. Serve on the toasted buns with lettuce, mustard and red onion; add pickle spears on the side.

Deliciously moist burgers with excellent seasoning. I didn’t have scallions so I substituted onion flakes to the mixture. Made them ahead of time so dried onion had time to reconstitute. I will make these again

Great recipe! I serve it without a bun on a bed of mixed greens and red onion and a drizzle of honey mustard dressing over the top. So tasty!

Great recipe but, unless I missed it, it omits the critical step of squeezing the liquid out of the zucchini before adding it to the mixture.  All I got was mushburgers.  I’ll make it right next time.  I agree with a previous reviewer who suggested adding an egg for cohesion.

This burger recipe is FANTASTIC!! I had doubts thinking too much zucchini but these are so flavorful. The portion is big! I added/a lavash wrap, avocado, lettuce mustard & ketchup. I used spray oil only. Macros are terrific, protein=39 grams, 292 calories for the burger alone using Butterball all-natural turkey, 248 grams zucchini, and 45 grams carrot.
