Hodad’s Blue Jay Burger

Ingredients

  1. 5 pounds blue cheese crumbles
  2. 3 1/2 cups real mayo
  3. 2 1/2 cups buttermilk
  4. One 1/2-inch-thick slice super colossal yellow onion, separated into rings
  5. One 1/3-pound 80/20 ground chuck beef patty
  6. 1 teaspoon seasoned salt
  7. 2 slices American cheese
  8. One 4-inch sesame seed sourdough bun
  9. 1 tablespoon real mayo
  10. 1 teaspoon yellow mustard
  11. 1 tablespoon ketchup, preferably Heinz
  12. Eight to ten 1/4-inch crinkle-cut dill pickle chips
  13. One 1/2-inch-thick slice tomato
  14. 1/2 cup shredded lettuce
  15. Hodad’s Signature Bacon Patty, recipe follows
  16. 4 pounds sliced bacon

Instructions

  1. For the Hodad’s blue cheese sauce: Combine blue cheese, mayo and buttermilk in a bowl until well mixed.
  2. For the Hodad’s blue jay burger: Cook the onion rings on a griddle until caramelized. Set aside.
  3. Sprinkle both sides of the beef patty with the seasoned salt. Sear on hot griddle until browned and cooked through, 3 to 4 minutes on each side. Add the cheese and let melt.
  4. Toast top and bottom of bun on the griddle until golden brown.
  5. Add mayo, mustard and ketchup to bun bottom, then add pickle chips, tomato and lettuce.
  6. Top with beef patty, then with Bacon Patty and 1/3 cup Hodad’s blue cheese sauce, grilled onions and toasted bun top.
  7. Place bacon in a large pot and cover with 2 quarts water. Bring to a boil and cook until the bacon fat renders, about 45 minutes.
  8. Place a 4-ounce serving of bacon on a hot flat-top grill or griddle and weigh down. Cook, flipping occasionally, until both sides are crispy. Repeat with remaining bacon.
