Ingredients

  1. 1 pound 80/20 ground beef
  2. 8 ounces fresh chorizo, casings removed
  3. 8 ounces chipotles in adobo sauce
  4. 3 cups mayonnaise
  5. 1/2 ounce freshly squeezed lemon juice
  6. 1/2 ounce salt
  7. 4 avocados
  8. 1/2 cup freshly squeezed lemon juice
  9. 1/2 cup diced onion
  10. 1/2 cup diced tomato
  11. 1 ounce salt
  12. 1/2 ounce granulated garlic
  13. 2 diced jalapeños, no seeds
  14. 1 bunch diced fresh cilantro
  15. 4 slices pepper jack cheese
  16. 4 hamburger buns
  17. Lettuce and tomato, for topping burgers

Instructions

  1. For the patties: Mix the beef and chorizo in a bowl, then form into 4 patties and set aside.
  2. For the chipotle sauce: Blend the chipotles and place in a bowl. Fold the blended chipotles into the mayo, then add the lemon juice and salt. Set aside.
  3. For the guacamole sauce: Cut and peel the avocados and add to a bowl; add the lemon juice, onion, tomato, salt, garlic, jalapeños and cilantro. Mix well.
  4. Cook the patties to medium. Place one slice of cheese on each patty and melt. Add the chipotle sauce to both sides of each hamburger bun. Add the lettuce and tomatoes to each bun. Place a patty on each and top with a generous portion of guacamole. Enjoy!
