Beef, Bean and Veggie Burgers

Ingredients

  1. 1 tablespoon plus 2 teaspoons olive oil
  2. 1/2 cup finely diced yellow onions
  3. 1/2 cup grated carrots (see Cook’s Note)
  4. 1/2 cup grated broccoli
  5. 1 jalapeño, seeds and membrane removed, finely minced
  6. 1 teaspoon chili powder
  7. 1 teaspoon garlic powder
  8. 1/2 teaspoon ground cumin
  9. 1 pound lean ground sirloin
  10. 1/2 cup grated oats (see Cook’s Note)
  11. 1/2 cup canned black beans, drained and rinsed, pulsed in a food processor
  12. 1 tablespoon Worcestershire sauce
  13. 1 teaspoon kosher salt
  14. 1/4 teaspoon freshly ground black pepper
  15. 1 large egg, lightly beaten
  16. 6 hamburger buns, toasted
  17. Sliced avocado, sliced tomato and ranch dressing, for topping

Instructions

  1. Heat 2 teaspoons of the oil in a large skillet over medium heat. Add the onions, carrots, broccoli and jalapeño. Cook, stirring often, until the vegetables are tender, about 5 minutes. Add the chili powder, garlic powder and cumin. Cook to bloom the spices, about a minute. Transfer to a large mixing bowl; reserve the skillet.
  2. Combine the vegetables with the beef, oats, beans, Worcestershire sauce, salt, pepper and egg. Lightly mix and form evenly into 6 patties.
  3. In the same skillet, heat the remaining tablespoon oil over medium-high heat. Cook the burgers until browned and crusty on both sides, about 3 minutes per side.
  4. Transfer the burgers to the buns, top with sliced avocado and tomato and drizzle with ranch dressing.

this is great and like a previous commentor said they just put it on a plate … I think using 2 thick slices of onions as buns on a plate with all the fixing on top of it would be awesome….a take on the IN AND OUT FLYING DUTCHMEN BURGER…yummo

I found this recipe earlier today and I’m making it for dinner. The burgers turned out great, however, this is the worst written recipe I have seen in a very long time. I’m shocked that food network even has this posted. The beef is not listed in the ingredients, the ingredients are listed all wonky and the instructions seem like a third grader wrote them. Again, the burgers were good, but the recipe and instructions suck.

Great burger – I did make a few modifications – used turkey instead of beef, skipped the broccoli because I didn’t have any on hand and added a slice of pepper jack cheese. The flavors were amazing and the texture of the burger was really nice too. The avocado was a great addition. Really delicious and healthy – definitely a keeper!

Great burger! I doctored up the ranch dressing with Sriracha and green onions. Instead of avocado slices I made guacamole. Sprinkled some cheddar cheese at the end before taking the burger off the pan. Had them with mikes killer bread hamburger buns. Will make again!
