When Guy was in college, he didn’t have enough money for the Buffalo wings at the local bar, so he found another way to get his fix: He’d order a basket of fries for a dollar, then get a side of hot sauce for 25 cents and toss the fries in the sauce. For another 25 cents, he’d add a cup of blue cheese dressing. So for $1.50, Guy felt like he was eating spicy Buffalo wings…without the wings! To recreate his college favorite, Guy tosses crispy waffle fries with Buffalo seasoning, then serves them with a tangy homemade Buffalo sauce. “Even when I got out of college and worked in restaurants, this was always my go-to snack—Vegas fries, baby!”

Ingredients

  1. 1/2 cup mayonnaise
  2. 1 cup sour cream
  3. 1/2 tablespoon white wine vinegar
  4. Kosher salt and freshly ground pepper
  5. Pinch of granulated garlic
  6. 1 1/2 teaspoons Worcestershire sauce
  7. 1/4 cup crumbled blue cheese
  8. 1/4 cup buttermilk
  9. 2 tablespoons wasabi powder
  10. 1 tablespoon distilled white vinegar
  11. 1/4 cup hot sauce, preferably Frank’s RedHot
  12. 1 teaspoon grated Parmesan cheese
  13. Pinch of chopped fresh parsley
  14. Kosher salt
  15. Vegetable oil, for frying
  16. 12 ounces frozen waffle fries
  17. 1 tablespoon Buffalo seasoning
  18. 2 tablespoons crumbled blue cheese
  19. 1/4 cup shaved carrots
  20. 1/4 cup shaved celery

Instructions

  1. Make the bleu-sabi sauce: Combine the mayonnaise, sour cream, vinegar, 1/4 teaspoon each salt and pepper, the granulated garlic, Worcestershire sauce, blue cheese, buttermilk and wasabi powder in a medium bowl. Mix well and season with more salt and pepper to taste. Refrigerate.
  2. Make the Buffalo sauce: Combine the vinegar, hot sauce, Parmesan, parsley and a pinch of salt in a small bowl. Mix well and refrigerate.
  3. Make the fries: Heat 3 to 4 inches of vegetable oil in a heavy pot until a deep-fry thermometer registers 350°. Add the waffle fries in small batches and fry until golden and extra crispy, 3 to 4 minutes. Remove with a slotted spoon and drain on paper towels.
  4. Toss the fries with the Buffalo seasoning and top with the blue cheese. Combine the shaved carrots and celery into a nest and top the fries with the nest.
  5. Serve the fries with the bleu-sabi and Buffalo sauces. Reserve any extra sauces for another use.
