Ingredients
- 2 pounds Yukon Gold potatoes, peeled and cut into chunks
- Kosher salt and freshly ground pepper
- 1/2 English cucumber, chopped
- 1/4 red onion, finely chopped
- 1/2 cup chopped parsley
- 3/4 cup ranch dressing
Instructions
- Put the potatoes in a pot, cover with water and season with salt. Bring to a boil, then simmer until tender, about 12 minutes; drain and let cool.
- Transfer the cooled potatoes to a bowl and toss with the cucumber, red onion, chopped parsley and ranch dressing. Season with salt and pepper. Chill at least 1 hour.

I just made the ranch potato salad I thought it was easy and delicious
This is certainly better than anything I have bought from the store…which I usually do.
I’m a bit salt-averse because better not enough and still be able to add at the table. Anyway, the finished salad was a little bland so some more salt brought it up to speed.
The flavors in the salad will continue to marry and develop so I’m looking forward to the next meal!
Oh yes, dill is a great addition!
This is how I’ve always made my potato salad, I do the same with pea salad and macaroni salad, but I add bacon and cheese.
