Crispy Tortilla Pizza and Savings Salad

Ingredients

  1. 1 large yellow onion, halved, then sliced 1/4-inch-thick
  2. 2 tablespoons unsalted butter
  3. 2 tablespoons olive oil
  4. 1 pound sausage, removed from casings
  5. 4 teaspoons olive oil
  6. Four 12-inch flour tortillas
  7. 2 large tomatoes, sliced into thin rounds (about 16 slices)
  8. 3 cups shredded mozzarella
  9. 1/2 head iceberg lettuce, chopped
  10. 1 small tomato, diced
  11. 4 strips cooked bacon, chopped
  12. 1/3 cup blue cheese dressing

Instructions

  1. For the caramelized onions: Cook the onions in the butter and oil in a skillet over medium-low heat, stirring occasionally, until caramelized, about 20 minutes. Set aside.
  2. For the pizza: Cook the sausage in a skillet, breaking up with a wooden spoon, until crumbled and cooked through. Set aside.
  3. Adjust an oven rack in the middle position and preheat the broiler to high. Add the oil to a large nonstick skillet over medium heat, then add a tortilla; this will start crisping the bottom of the tortilla before it goes in the oven. Almost immediately, build the pizza right in the pan, starting with a quarter of the tomatoes followed by the a quarter of the cheese, making sure the cheese goes all the way to the edge and beyond. Then add a quarter of the onions and a quarter of the sausage. Transfer the skillet to the broiler and cook until the cheese is golden brown and melted, 4 to 5 minutes. Repeat with the remaining pizza ingredients to make 3 more pizzas. (You can hold the pizzas in a warm oven while you make the others.)
  4. For the salad: Place the lettuce in a salad bowl. Top with the tomatoes and bacon and drizzle with dressing.

Made the recipe just as written, and the kiddos loved! Teenagers are hard to please, and this did it! Loved the crispy shell. One of the eaters rolled it up and ate it almost like a Stromboli.

I’m not a fan of sausage so I picked my own toppings. This was delicious! I normally don’t like thin crust pizza but since this is just a tortilla it gets nice and crispy like a cracker, I love it! Great for saving money AND some carbs!

Love this method! I have made this probably 10 times using homemade pizza sauce. My favorite topping combination is roasted garlic, caramelized onions and fresh basil. I love to add freshly grated
Parmesan around the edge of the tortilla and up the side of the pan a little ways to mimic the pizza crust edge. Delicious!

I will never make a tortilla pizza on a pan in the oven again! This makes a great crispy crust. I like using a pizza sauce instead of the tomato slices but other than that I followed the recipe perfectly. I loved the extra cheese falling off the edge. It was great!! Thanks Jeff!

Absolutely delicious! I turned the tortilla over after it browned ever so slightly on the first side. Then I added the tomatoes cheese onions and sausage while the tortilla browned on the other side. I sprinkled Italian seasoning on the cheese and a pinch of red pepper flakes. Also used carb smart tortillas, only 70 calories. So good!!
