Ingredients

  1. 4 strips thick-cut bacon, finely chopped
  2. 1 onion, finely chopped
  3. 3 cups frozen chopped collard greens, thawed
  4. Kosher salt and freshly ground pepper
  5. 2 15-ounce cans black-eyed peas
  6. 3/4 cup spicy barbecue sauce

Instructions

  1. Cook the bacon in a wide pot over medium-high heat until lightly browned, about 5 minutes. Add the onion and cook, stirring, until tender, about 4 minutes. Add the collard greens and
  2. a pinch of salt; cook, stirring, for 2 minutes. Stir in the black-eyed peas and their liquid, 1 cup water and the barbecue sauce; bring to a boil, reduce the heat to low and cook until the liquid is reduced and the greens are tender, 8 to 10 minutes. Season with salt and pepper.
