Ingredients
- 2 tomatoes, chopped
- Handful of fresh basil leaves, chiffonade
- 1 clove garlic, finely chopped, or 1 tablespoon garlic paste
- Kosher salt and freshly ground pepper
- 1 loaf Italian or French bread, sliced into rounds
- Extra-virgin olive oil, for drizzling.
- 2 tablespoons grated pecorino Romano
Instructions
- Combine the tomatoes, basil, garlic and a pinch of salt and pepper in a medium bowl. Let sit for 5 minutes. Meanwhile, lightly toast the bread. Spoon the tomato mixture on the bread, drizzle with the oil and sprinkle with the pecorino before serving.
