Spicy Cherry Brownies

Ingredients

  1. 1 cup butter, plus more for greasing
  2. 3 cups granulated sugar
  3. 1 tablespoon vanilla extract
  4. 4 eggs
  5. 1 1/2 cups all-purpose flour
  6. 1 cup unsweetened cocoa powder
  7. 1 teaspoon cayenne pepper
  8. 1 teaspoon salt
  9. 1/2 teaspoon cinnamon
  10. 1 cup dried cherries
  11. 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Lightly grease a 13-by-9-inch baking dish.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter, sugar and vanilla extract. Beat in the eggs, one at a time, until thoroughly combined. Use a rubber spatula to scrape down the sides of the bowl to get any butter that might have gotten stuck.
  3. In a separate bowl sift together the flour, cocoa powder, cayenne, salt and cinnamon.
  4. Slowly beat the dry ingredients into the butter mixture. Continue mixing until evenly combined, but avoid over-mixing. Gently fold in the cherries and chocolate chips using a rubber spatula. Pour the batter into the baking dish and use the spatula to level the top of the batter.
  5. Bake until the brownies are set and a toothpick stuck in the center comes out clean, 35 to 40 minutes. Remove the brownies to a cooling rack, and cool completely before serving.

I made this today, with a few variations. 3 cups of sugar is alot so I used 2, no difference i guess since its the first time. I also made a dark chocolate spicey ganache to match the spice of the brownies. Its so good!
