Simple Cream of Broccoli Soup

Ingredients

  1. Deselect All
  2. 2 tablespoons butter
  3. 1/2 cup cream, heavy, light or half-n-half
  4. 1 onion, chopped
  5. 1 russet potato, peeled and chop
  6. Nutmeg, to taste
  7. 6 cups canned chicken stock, warmed
  8. Salt
  9. 3 cups chopped broccoli florets and stems
  10. Pepper

Instructions

  1. In a large pot, melt butter and cook onion until tender over medium high heat. Add potato and toss to coat with butter. Add hot stock and bring to a simmer. Stir in broccoli and return to a simmer. When potato and broccoli are tender, puree in batches in a blender or food processor. Return to pot and add cream. Season to taste and serve warm.

My second time using the basic recipe. I do not measure to the exact amount. I use the
Ingredients and guess about the amounts. So far we have liked the soup both times. The potato is important and I also add a handful of grated Mexican blend cheese.

On the advice of others I only used 3 cups of broth. I added garlic and substituted leeks for the onion. It was very creamy and delicious, I’ll definitely make it again.

This is very easy and tasty but I found that 3 cups of broth is plenty to make a soup with a thicker consistency. You can always add broth when it finished but it’s a time consuming process to reduce it if it’s too thin!
