Vegetables with Broccoli Lemon Sauce

Ingredients

  1. 12 small red potatoes, cut into quarters
  2. 1 large green or red bell pepper, cut into 1/4-inch rings
  3. 2 cups broccoli florets
  4. 1 (10.5-ounce) can 98 percent fat-free cream of broccoli soup
  5. 1/2 cup low-fat mayonnaise
  6. 4 green onions, finely chopped
  7. 1 tablespoon lemon juice
  8. 1/4 teaspoon dried thyme leaves, crushed

Instructions

  1. Place potatoes in a saucepan and cover with water. Heat to a boil and then reduce heat to low for 10 minutes. Add pepper and broccoli. Cook for 5 minutes or until vegetables are tender. Strain. In a separate saucepan, mix soup, mayonnaise, onions, lemon juice, and thyme. Heat through. Serve over vegetables.

I saw this on the show and thought it looked yummy, so made it for dinner to go with grilled pork chops. It had a heavy consistancy, bland flavor and, in my opinion, ruined my veggies. I would have been better off with a little butter and salt. I will not be making this one again. Ever.

um, how is mayonnaise (regardless of whether or not it is low fat) mixed with condensed soup ever okay for a healthful meal? My friend and I made and ate this for our Semi-Edible blog and the only reason we kept eating was because we were starved and we took off most the sauce.

The veggies were a mishmash of crunchy and uncooked and mushy and overcooked. The sauce was hands down repulsive.

The sauce was absolutley disgusting. Slimy and artificial tasting. The potatoes were still rock hard when the other vegeatbles were done. You’d think the recipe could account for that.

The veggies need difft. times to cook, so you are left with some which are overcooked and soft and others which are very undercooked and rock hard. The sauce is horrible. What a terrible recipe!

Canned soup and mayo? Tasted worse than I ever imagined. Even my sons, who will eat just about anything, refused it and asked me not to make it again.

I made this dish last night along with her tropical fruit mango marinated fish and it was a great accompaniment. My husband and myself enjoyed the vegetable trio…I prefered more sauce while he prefered slightly less. This was a very simple dish to make and looked very pretty on the plate…it was also delciious! I recommend it. It’s really versatile too…you can use it over almost anything…eggs, fish, meat, veggies. Fruit would not be a good idea though 🙂
