Roasted Cheddar Broccoli

Instructions

  1. Cut 1 large head broccoli into long spears. Toss with 2 tablespoons olive oil on a baking sheet; season with salt. Roast at 450 degrees F until almost tender, 15 minutes. Toss 1/2 cup breadcrumbs (preferably panko) with 1 cup grated sharp cheddar, 1 bunch sliced scallions, 1 tablespoon olive oil and a pinch of nutmeg. Sprinkle on the broccoli and roast 15 more minutes.

Liked the crunch for a new way to cook broccoli. Used reduced fat cheddar. Sprayed broccoli with Pam and put in microwave for 5 min at 40% power. Scrunched broccoli together and sprinkled on the topping. Broiled for 4 min.

The cheese/panko didn’t stay on top of the broccoli, so it ended up being broccoli with cheese/panko chips between the broccoli. I have roasted broccoli many times; I added the cheese to accommodate a broccoli hater, but I think plain roasted broccoli is better. Won’t be making this again – will make a simple cheese sauce for the broccoli hater next time.

Absolutely delicious and bursting with flavor. I deducted a star for the dry texture. I wish the cheese was more melted and not so dry. Perhaps next time, I’ll prepare a cheese sauce before roasting. To keep the broccoli bright green and avoid any wilting, I steamed it instead and then roasted it with the topping as directed. Overall, it was very flavorful amd satisfying.

Steamed broccoli for about 5 min first then into the oven to dry out for another 5. Tasted good but the topping did not stick to the broccoli at all. Next time I will try a more melty cheese, I find sharp cheddar
is not the best melting cheese. Could use a little kick, maybe a smokey Gouda . Will try again with changes. As is, it’s a little bland.

Made this just like recipe said. Broccoli was too wilted from roasting, taste was very good though. Loved the crunch of crumbs and cheese. I’ll make this again but next time I’ll steam broccoli till almost done and then finish in oven with crumbs and cheese.
