Broccoli with Garlic and Soy Sauce

Ingredients

  1. 1 head garlic, peeled (about 16 cloves)
  2. 1 cup good olive oil
  3. 1 teaspoon crushed red pepper flakes
  4. 1 teaspoon kosher salt
  5. 4 stalks broccoli, cut into florets (8 cups of florets)
  6. 2 tablespoons soy sauce

Instructions

  1. Put the garlic cloves and oil in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 to 15 minutes, until the garlic is browned and tender. Turn off the heat and add the red pepper flakes and 1/2 teaspoon salt. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.
  2. For the salad, blanch the broccoli florets in a large pot of boiling salted water for 2 to 3 minutes, until crisp-tender. Drain well and immerse immediately into a large bowl of ice water until the broccoli is cooled. This process stops the cooking and sets the bright green color. Drain well.
  3. In a large bowl, toss the broccoli with 1/2 teaspoon salt, 1/4 cup of the oil used to cook the garlic, the soy sauce, and 8 or more cloves of cooked garlic. Taste for seasonings and serve cold or at room temperature.

This recipe turned out so good I subbed the red pepper flakes for sesame seeds it gave it a savory flavor. It made the house smell like my kind of heaven also while I was browning the garlic in the oil I tossed in about a 1/4 cup of diced onions. In the end I used the last 1/2 cup of oil to make my stir fry which turned out super taste even my anti veggie eater enjoyed it thank you so much for posting this recipe instant family favorite

Just perfect! My husband and I love broccoli and garlic and soy sauce. Putting them together never crossed my mind. This is delicious. Wish I had made more. Having tons of fun with the infused oil; Brushed on individual bread loaves before baking; with some good balsamic to dress warm beets and leeks….the possibilities are endless.

This recipe has a huge mistake. Olive oil boils at 570 degrees. You don’t even deep fry that hot. The recipe is probably meant to say, “bring the oil up to ~220 degrees when the garlic begins to sizzle.” Then take it off the heat and let it rest for 10 minutes. Garlic is “brown and tender” after about 1 min of saute. Burned garlic is just yuck. The editors should check with Ina for a clarification.

I did not like this at all and I am also usually a big Ina fan. It just did not work. I watched the episode and she is clear that the sauce adheres better to the broccoli if the broccoli is dried a bit. I did that, but to me it tasted like oily broccoli with garlic. I won’t make this again.

Ina is my first go-to for recipes. Prior to making this recipe I read all 36 reviews. I followed this recipe exactly and was horribly disappointed with the taste, much less the time and labor to prepare. I hope to salvage the garlic infused oil for something but the broccoli tasted awful. I have never in my entire life thrown away food unless already spoiled, but my husband and I agreed this was not edible for us. I cannot understand how other reviewers consistently rated this five star. I regret posting a one star on an Ina recipe, and have never before rated a recipe one star. I did not deviate from the recipe so I cannot claim responsibility for messing up. We wound up having Cheddar cheese and whole wheat crackers with wine instead.
