Deep-Fried Broccoli

Ingredients

  1. Deselect All
  2. Vegetable oil, for frying
  3. 3 tablespoons grated Parmesan
  4. 1 teaspoon ground sumac
  5. 1/2 teaspoon ground cayenne
  6. Zest of 1 lemon, plus wedges, for serving
  7. 6 large cloves garlic, thinly sliced
  8. 1 head broccoli (about 1 pound), cut into florets
  9. Kosher salt

Instructions

  1. Heat about 2 inches of oil in a large pot to 365 degrees F. Meanwhile, line a baking sheet with paper towels.
  2. In a small bowl, stir together the Parmesan, sumac, cayenne and lemon zest.
  3. Add the garlic to the oil. Fry until light golden, 30 seconds to 1 minute. Remove to the lined baking sheet to drain. Add half of the broccoli to the oil and fry, turning occasionally, until browned and crispy, about 3 minutes. Remove to the lined baking sheet to drain and season with salt. Repeat with the remaining broccoli.
  4. Put the broccoli in a serving bowl and toss with the Parmesan mixture. Sprinkle with the fried garlic. Serve immediately with lemon wedges.

This is a delicious and easy broccoli recipe.  The topping really makes it. It’s a nice change from roasting it.
