Broccoli Salad

Ingredients

  1. 8 ounces bacon
  2. Salt
  3. 5 cups small broccoli florets
  4. 1 cup mayonnaise
  5. 1 tablespoon cider vinegar
  6. 1/3 cup chopped onion
  7. 1/4 cup sugar
  8. 3/4 cup raisins
  9. 1/2 cup sunflower kernels

Instructions

  1. Cut the bacon into small pieces and cook over medium heat just until crisp; drain on paper towels.
  2. Bring a large saucepan of salted water to a boil. Add the broccoli and blanch until bright green and slightly softened, about 3 minutes. Drain well, run under cold water to stop the cooking, and drain again.
  3. In a mixing bowl, combine the mayonnaise, vinegar, onion, sugar and raisins. Add the broccoli and toss the coat with the dressing. Refrigerate for 1 hour.
  4. Just before servings, fold in the sunflower kernels and the bacon pieces. Serve immediately.

Followed recipe exactly. I agree with others that boiling broccoli for 3 minutes is way too long. and The dressing was tasty but too watery. Perhaps due to overcooked broccoli?

Amazing recipe, although I do not cook the broccoli, and I use cranberries and cashews instead of sunflower seeds and raisins. But it’s A+ either way, with any nut and dried fruit mix. it’s the dressing that makes it.

Great recipe. Cooked broccoli just 1 min and then blanched. Used part plain Greek yogurt mixed mayo. Also substituted walnuts for sunflower seeds.

I love this salad and use craisins for the holidays. I too believe blanching for 3 minutes is too long. I blanch mine in salted water for 60 seconds and immediately strain and place it in iced water for 2 minutes. Then strain again and use kitchen paper to dry the broccoli completely otherwise it dilutes the dressing….With these changes, it is a 5-star recipe♥
