Broccoli “Rice” with Garlic, Lemon and Chile Pepper

Ingredients

  1. 3 broccoli stalks
  2. 1 tablespoon unsalted butter
  3. 1 small clove garlic, minced
  4. 1 tablespoon lemon zest
  5. Pinch crushed red pepper, optional
  6. Kosher salt and freshly ground black pepper
  7. 2 tablespoons freshly grated Parmesan

Instructions

  1. Cut broccoli stalks into 1/2-inch chunks and put into a food processor. Pulse until stalks resemble rice.
  2. Melt butter in a medium skillet over medium-low heat. Add garlic and stir for about 1 minute. Increase heat to medium and add broccoli rice. Cook, stirring often, until tender, 5 to 7 minutes. Turn off heat, stir in lemon zest and red pepper if using and season with salt and pepper. Serve topped with Parmesan.

I subbed riced cauliflower since I couldn’t find broccoli. I would up the garlic and leave out the red pepper next time.

I really appreciate this recipe. It really allows you to stretch your broccoli and use all of it. As others have said, this is a great jumping off point. I used half butter, half olive oil, sautéed the garlic and pepperoncino first,I also added a small anchovy to this step, because I really like the umami flavor they add. Then added the broccoli. I finished it as the recipe states with the lemon and parmesan. I may have added some extra lemon juice from the lemon I zested. So bright! So yummy!

I’ve been making this since Katie made it on the show. It’s just perfect. Easy and delicious. I made it again tonight. Only suggestion I have is to double the recipe. I could eat all of it with a slice of good bread for dinner!

Exceptionally bland. Needs a lot more red chili flake, S&P, lemon zest (I added the juice) and parmesan cheese than the recipe calls for. Taste as you go to get it “just right.”

Excellent recipe!  I bought the broccoli rice already ready to go from Trader Joe’s.  The parmesan on top at the end is key!

This is soooooooo good! It took minutes to make and has a ton of flavor. The chili flakes and lemon zest make it!!!! Super excited to make this as a side at my next dinner party. I had to stop eating it for a minute to write this review right away…going back for more bites now.
