Ingredients
- 1 (2 1/2 to 3-pound) turkey breast, bone-in
- 3 cups buttermilk
- 1/2 cup hot sauce (recommended: Crystal)
- 2 tablespoons kosher salt
- 1 tablespoon dried basil
- 1 tablespoon granulated garlic
- 1 tablespoon fresh cracked black pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon ground white pepper
Instructions
- Combine all the ingredients together in a large re-sealable plastic bag. Place in a bowl, to catch any leaks, and refrigerate for 12 to 24 hours.
- Preheat the oven to 325 degrees F.
- Remove the turkey breast from the brine, drain well and pat dry with paper towels.
- Place the turkey breast, skin-side up, on a baking sheet fitted with a wire rack. Place in the oven and cook for 1 hour 15 minutes. Turn the oven up to 400 degrees F and cook for an additional 10 to 15 minutes, or until the internal temperature is 160 degrees F and the skin is nicely browned. Remove from the oven, cover with aluminum foil and let rest for 10 minutes.
- Meanwhile, preheat the grill to medium heat and oil the grates generously with vegetable oil.
- Once the turkey has rested, cut the meat off the bone and carve into 3/8-inch thick slices. Place the slices on the grill and cook 1 to 2 minutes on each side, just until grill marks develop.
- Remove from the grill. Use in a Po’ Boy or as main course.

This is absolutely delicious! I cut the salt in half and let my bone in breast brine for about 16 hours. Then I rinsed it and out it back in the fridge. I smoked it and oh my! It’s so good I asked my husband why we only cook turkey at Thanksgiving?
I’ve made this 3 years in a row using using a boneless turkey breast and each time my family has raved over it. This is the most delish turkey over ever tasted hands down. This is restaurant quality stuff here…..and I’m able to cook it in my home.
This is an awesome recipe that I just cooked for the second time this weekend. I brined my turnkey breast for almost 24 hours in a large ziplock. When I cook this I place this on a cooling rack and let drip into the sink and do not dry the turkey. I love the smell and the flavor of the turkey! Makes a great turkey and bacon panini on sour dough the next day! Meat also freezes well and keeps the flavor for later sandwich use!
The first time I tried this recipie I only had an hour for it to brine…and it was still amazing! So juicy, so flavorful, it’s my favorite way to eat turkey now. I’ve had one in the fridge for 17 hrs now and it’s coming out soon for thanksgiving. Thanks, Guy

This is the bomb. My husband does not like turkey and he liked this alot. It is not spicy but has a wonderful flavor. Thumbs up!!
