Festive Baked Brie Bites

Ingredients

  1. Two 4- to 5-ounce wheels Brie cheese
  2. 3 tablespoons dried cranberries, finely chopped
  3. 3 tablespoons shelled pistachios, finely chopped
  4. All-purpose flour, for dusting
  5. One 8-ounce sheet refrigerated crescent dough
  6. 1 large egg, beaten
  7. 1 teaspoon chopped fresh rosemary, plus whole sprigs, for garnish
  8. 1 teaspoon sea salt
  9. 1/4 cup pomegranate seeds
  10. Honey, for drizzling

Instructions

  1. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  2. Cube each wheel of Brie into 12 pieces. They do not need to be perfect cubes. Set aside.
  3. Mix the cranberries and pistachios together in a small bowl. Set aside.
  4. Lightly dust a cutting board with flour. Unroll the crescent dough (it should be an 8-by-12-inch sheet) onto the dusted surface. Using a knife, cut 4 lines down the 8-inch side and 6 across on the 12-inch side to get 24 squares.
  5. Place a cube of Brie in the center of each dough square. Sprinkle about 1/2 teaspoon of the pistachio and cranberry mixture over the top of each cube of Brie. Fold the corners of each square together, lightly pinching to seal everything in. Transfer the bites to the prepared baking sheet.
  6. Whisk together the egg and 1 tablespoon water in a small bowl and brush the top of each bite with the egg wash. Sprinkle each with a little rosemary and a bit of sea salt. Bake until golden brown, 12 to 14 minutes. Let cool for 2 to 3 minutes.
  7. Carefully transfer the bites to a serving platter. Scatter the pomegranate seeds around the bites, drizzle with honey and frame the platter with rosemary sprigs for color and festive fun. Enjoy!

I made these tonight; although I forgot about the rosemary, I made them exactly as written. I thought they were very yummy, and the honey and pom arils, truly sent this appetizer over the top!

I cut one sheet into 12 squares to make them easier to fold and seal and prevent breakage. I altered the ingredients. I used a small cube of brie, and few pieces of caramelized onion and a few chopped walnut pieces. Nonetheless, they still leaked all over during baking, despite sealing tightly and there was virtually no brie left in the finished bites.

Based on the reviews that said it lacked flavor, I used Camembert instead of Brie. As written, they didn’t seal at all after dusting with flour and rolling out. Also, using one sheet didn’t work for 24 pieces. Instead used 2 tubes of dough and cut each into 12 pieces—the one can into 24 just got too thin and broke. After dusting with flour and rolling out only a little, I brushed edges with water to help seal. With the right sized dough squares, much easier to put together. Will update after I bake and serve them—love the honey and pomegranate seed finishing idea…fingers crossed!

I turned them into a dessert bite. I put a chocolate kiss, some marshmallow bits, and Graham cracker crumbs inside. Dusted them with a little powdered sugar. I get invited to friends for the holidays and I’m in charge of the sweets.

Looked good, but the flavor was disappointing. Pistachios, cranberry and Brie taste great together, but after baking the flavor intensity was lost. More trouble than it’s worth. We tossed them,s et out a quarter of Brie, crackers, a dish of cranberries and pistachios and guest happily made their own bites.

These brie bites tasted OK with cranberries and pistachios, but were not 5-star fantastic. This recipe was time consuming and probably not worth making again. Even with using a small cube of brie and sealing the edges of the dough tightly, brie oozed out during baking. Will probably not make again.

I made them for card night and they were a hit. I also made some with blue cheese and they were great too.

Amazing! I added homemade cranberry sauce and baked in a mini muffin tin. I made ahead and froze them too. Everyone loved these. They will be on my table for a lot of parties!
