Baked Brie Spanakopita

Ingredients

  1. 1 cup thawed frozen spinach, squeezed of excess water using a clean towel
  2. 1/4 cup crumbled feta
  3. 1/4 cup ricotta cheese
  4. 1/4 cup thinly sliced scallions
  5. 1/4 cup finely chopped fresh parsley
  6. 2 tablespoons finely chopped garlic
  7. Kosher salt and freshly cracked black pepper
  8. One 12- to 14-ounce wheel Brie cheese
  9. 3 frozen phyllo dough sheets (18 by 14 inches), thawed
  10. 1 stick (8 tablespoons) unsalted butter, melted

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Combine the spinach, feta, ricotta, scallions, parsley and garlic in a bowl. Season with salt and pepper. Cut the Brie in half through the equator. Place the filling in the center of the cheese and top with the other half.
  3. Lay 1 sheet of phyllo onto a work surface and brush with butter. Lay another sheet down and turn it slightly, keeping the center point. Brush with butter. Repeat to make a complete wheel with the last sheet. Brush with butter. Place the cheese wheel in the center of the phyllo and wrap the phyllo, twisting the top vertically. Some pieces may crumble.
  4. Brush with more butter and transfer to a roasting rack on a baking sheet. Bake until caramelized, about 20 minutes. Allow to rest on a cooling rack for another 15 minutes before serving.

I just love this recipe. Great idea, spinach pie with Brie! Added collard greens to my spinach! Will keep/make this for gatherings/parties!! TU!

This was fantastic! It will be one of our favorites. I got a bit more garlic than I should have, but it was still great. Brie must be sold in smaller wheels now; I couldn’t find one the size this recipe called for. I’ve made a similar recipe before, but it used too much phyllo dough. 3 sheets are just perfect. Give this a try!

Am I the only one who ended up with a pancake? I did it at 400 degrees for 20 minutes, as instructed, and it was just a mess. The phyllo had a brown little tip but the rest was spread out. I almost threw it out, but brought it to the party anyway. We had a good laugh and they loved it! Some are going to try to make it too, but seriously, where did I go wrong?

I have made this several times and it is a hit every time…I always get request to make it for parties…also I made one and the gathering was cancelled at the last minute so I wrapped it and froze it…the next party I was ready…thawed it and baked it…it was perfect…froze very well.

I watched the kitchen today, and they made  this recipe.  I downloaded it for Christmas cocktail party, at my husbands request!!  I am wondering though,what bread was served with it and would you toast the bread prior to serving?  It looked so good on the TV today, I wish someone would invent smellatellavison…lol  or tastovision…I will work on that invention…Ffter I make the recipe myself, wish me luck..♥

This is amazing! Everybody was pretty impressed when I told them I made it.  I have never had Brie savory–usually with cranberry on it.  GZ gives a great tip in the episode that is not mentioned in the recipe–coat your knife with cooking spray before you slice the brie through the equator.  The knife slid right through.  This recipe is a crowd pleaser.
