Ingredients
- 1 tablespoon extra-virgin olive oil
- 2 cups leftover roasted vegetables, such as potatoes, carrots, parsnips and onions
- 2 cups leftover cheeses, cut into pieces, such as Brie, Parmesan, and/or Gruyere
- 1/4 pound Canadian bacon or Black Forest ham, chopped
- 1/2 cup chopped scallions
- 12 eggs, at room temperature
- 2 cups milk, at room temperature
- 1 teaspoon kosher salt
- 1/2 teaspoon crushed red pepper flakes
Instructions
- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with the olive oil. Spread the vegetables in the bottom, then top with a layer of the cheeses, then the ham, and then the scallions.
- Whisk together the eggs, milk, salt and red pepper flakes in a medium bowl. Pour the mixture over the layers and bake until lightly golden and the egg is set, about 50 minutes Allow the bake to sit for 5 minutes before cutting and serving.

This dish is so fantastic, I totally love it and will make it again for sure. I added some of my house spices to egg mixture perfect dish Giada you related add what yo want so I did ! Leftover ham I had to cut off the bone, 3 cheeses, carrots peas, tator tots I seasoned and the egg mixture! It took me a while but it was so worth my time! Stay on prime time Giada. ☮️

A great way to use up things in the fridge! Used a large red-skinned potato, celery, green capsicum & spinach & mushrooms. Added brie cheese & scallion. Then a 4 egg milk mix with seasoning. Enough for 2-3 people.
I use it all the time, various veggies & use shredded To Mexican blend cheese. Sooo good for breakfast actually since lots of protein! Thank you for an easy way to feed myself . I do it every couple of weeks!

I halved the recipe because I was cooking for 4 people and it was absolutely delicious. I used cooked bacon which I had left over because that was all I had and wanted to use it up, so I crumbled that up. Also used roasted carrots, parsnips, onions and baby potatoes. Terrific way to clean out your cheese drawer also because almost any cheese works. This is great for breakfast, lunch or dinner! Since I halved the recipe, I used a 9×9 baking dish and it was done after 40 minutes.
OMG it was delicious. Although in your show you didn’t say anything about how much milk. I used 1 cup milk 1 cup heavy whipping cream.
Just wish you were more precise when you are describing the recipe on TV. You confuse me. I’m in a French Culinary Arts School and I think you need to describe everything better. You never give measurements on TV. I think a professional Chef would go into more detail.
