Zucchini Bread Breakfast Pizza

A GREAT dry ranch mix you make yourself and then combine with mayo and buttermilk. Get your spices in bags on the “ethnic” or “Mexican” aisle of the grocery; they’re substantially less expensive! Enjoy!

Ingredients

  1. 2 tablespoons coconut flour
  2. ⅛ teaspoon ground cinnamon
  3. ½ cup shredded zucchini
  4. 1 egg, beaten
  5. 1 ½ teaspoons pure maple syrup (Optional)
  6. ⅛ teaspoon vanilla extract
  7. ¼ cup Greek yogurt
  8. 2 fresh strawberries, hulled and sliced
  9. 4 grapes, halved
  10. ½ banana, sliced
  11. ¼ teaspoon orange zest, or to taste (Optional)
  12. 1 teaspoon maple syrup, or to taste (Optional)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. Combine coconut flour and cinnamon in a bowl. Add zucchini, egg, 1 1/2 teaspoon maple syrup, and vanilla extract and mix well. Spread zucchini mixture into the form of a pizza crust on the prepared baking sheet.
  3. Bake in the preheated oven until zucchini “crust” is cooked through, about 15 minutes. Cool “crust”.
  4. Spread yogurt onto zucchini “crust” and top with strawberries, grapes, banana, orange zest, and a drizzle of maple syrup.
  5. A flax egg (flax seed mixed with water) can be used in place of egg for a vegan option.
  6. Honey can be used in place of the maple syrup, if desired. Coconut yogurt can be used in place of Greek yogurt. Any types of fruit can be layered on top of the bread.

I rated it before I made it because I know I will love it! Must get all ingredients soon. Looks delicious and inspiring for the summer time! (Later that day) I made it just like the recipe and loved it. Next time I am going to try the variation with some different fruits! I also like the suggestion to use honey instead of the maple syrup but is that just on the topping or can honey be used in the batter? I am doubling the recipe so to make a Flag design with the blueberries, strawberries and bananas for the 4th of July!

This was a really fun and different breakfast! I tried lots of different toppings: yogurt, cream cheese, jam, Nutella, and then fruit on top. Since I didn’t have coconut flour, I used twice the amount of a gluten-free flour blend. Also, the recipe is for a really small pizza! I doubled the recipe and there was about enough for an 8-inch crust (a small breakfast for four people).
