Ingredients
- 1 cup uncooked rolled oats
- 1 cup whole wheat flour
- ¾ cup all-purpose flour
- ¼ cup brown sugar
- 2 tablespoons dry milk powder
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 cups milk
- 1 large egg
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 1 medium banana, mashed
- 1 teaspoon vegetable oil, or as needed
Instructions
- Blend oats in a blender until the texture resembles coarse flour.
- Transfer oats to a bowl. Add both flours, brown sugar, milk powder, baking powder, baking soda, and salt; whisk until well combined.
- Whisk together milk, egg, 2 tablespoons vegetable oil, and vanilla in a separate bowl; stir in mashed banana. Pour egg mixture into flour mixture; stir just until moistened, then let batter stand for 5 minutes.
- Lightly oil a griddle with 1 teaspoon oil and heat over medium-high heat.
- Working in batches, drop batter by large spoonfuls onto the hot griddle; cook until bubbles form and the edges are dry, about 2 minutes. Flip, and cook until browned on the other side. Repeat with remaining batter.
- Sometimes we change it up a bit by adding 1/2 cup applesauce and 1 1/2 teaspoons cinnamon instead of the banana.

Such a great change from regular pancakes! And I love that they are heartier and healthier too, perfect with a little maple syrup for a fairly quick weekday breakfast the whole family loves. On weekends we have also added some chopped walnuts and banana to the maple syrup and warmed it up for an extra delicious topping. I followed another reviewer’s suggestion to blend dry ingredients together, then throw in the wet to mix bananas in well and save a little time.
One of our favorite healthy pancakes. Like others, I omit the powdered milk. To make it even easier, I first blend the oats, then add the other dry ingredients and blend again briefly. Empty it into a giant Pyrex measuring cup. Sometimes the oats stick in the blender blades, so I can scrape them out. Then put all the wet ingredients (no need to mash the banana) in the blender until smooth. Add wet on top of dry and continue as written. I always make a full recipe and freeze the leftovers with wax paper between them.
Delicious! I skip the dry powder milk and added some cinnamon!
We followed the recipe except we did not have the skim milk powder and we added 1.5 bananas because that is what we wanted to use up, and we added blueberries. They were really nice. They are thicker and heartier than traditional fluffy pancakes but we were expecting that and really loved them.
I loved this recipe I omitted the white all purpose flour and doubled the whole wheat flour and I didn’t have milk so I added Greek low fat yogurt. Win.
I made this vegan by substituting ground flax for the egg (1 tbsp ground flax and 3 tbsp water) and omitting the powdered milk. I also used the applesauce and cinnamon variation suggested. The pancakes seemed heavy and took longer to cook than I’m used to, but were very tasty and more nutritious than the standard fare. I also sprinkled blueberries on the top of several while cooking, poking them down into the batter before flipping. Initially concerned about the family’s reaction, I was pleasantly surprised that everyone liked them and agreed the recipe was a keeper.
Made half the recipe for 3 people , but still used a whole egg and whole banana. I used erythritol sweetener instead of sugar . Also, as I had avocado oil and believe it to be more nutritious , used that instead of vegetable oil , and couldn’t taste a difference. They came out Nice and fluffy . Even my son who is not a whole wheat flour fan , gave me thumbs up.
I made the applesauce and cinnamon variation and they were DELICIOUS. I didn’t add the dry milk powder and I added a little extra oil so that I wouldn’t have to oil my nonstick pan. They were SO, SO good. I’m always looking for healthy alternative recipes and I have found a winner. I would definitely make these again!

This is a healthified pancake, with the emulsified oatmeal and whole wheat flour. I used buttermilk powder in place of regular powdered milk and added cinnamon and nutmeg for extra spice. I’ll be using this recipe with and without the mashed banana.
These were fantastic, I made no modifications. By far my fav. pancake recipe.
And these freeze well if you are lucky enough to have leftovers.

Never had pancakes come out so perfect! I added 2 Tbsp lemon juice to sour my milk so increased baking soda by another 1/2 tsp. Used applesauce instead of banana (didn’t have). Very good! Thank you.

Very good!! Only made small changes. Used all whole wheat flour and no all-purpose, 2 bananas instead of 1, and subbed applesauce for the oil. They rose up very well and were delish with a sweetness to them that didn’t require syrup (although we still used some anyway!). Definitely a new family favorite!
I added oatmeal with wet Ingredients in blender, then mixed with dry ingredients. Added 3/4 tsp. cinnamon and 1/4 tsp. nutmeg. Delicious!!
These were great! I omitted the milk powder and threw everything else in the blender. Added a little cinnamon and chocolate chips. Next time I think I’ll try skipping the AP flour and add blueberries 🙂
