Whole Wheat Coconut Oil Waffles

Waffle with healthy fat and grains. For a quick toaster breakfast, freeze well! The recipe yield is for thin waffles; for Belgian waffles, I’d assume it would be at least half that. Sliced banana is my preferred topping.

Ingredients

  1. 1 ½ cups whole wheat pastry flour
  2. 2 tablespoons white sugar
  3. 2 teaspoons baking powder
  4. ½ teaspoon salt
  5. 1 ½ cups milk, room temperature
  6. ⅓ cup virgin coconut oil, melted
  7. 1 large egg, beaten
  8. ½ teaspoon vanilla extract

Instructions

  1. Preheat a waffle iron according to the manufacturer’s instructions.
  2. Whisk flour, sugar, baking powder, and salt together in a bowl; make a well in the center of the flour mixture.
  3. Beat milk, coconut oil, egg, and vanilla extract together in another bowl; pour into well in the flour mixture and stir until batter is just combined.
  4. Ladle batter into preheated waffle iron and cook until golden and crisp, 2 to 5 minutes.

After a pre-diabetic diagnosis, we are trying to eat more whole grains and healthier. But living in Guatemala, it is hard to find “exotic” ingredients like pastry flour. But this recipe for waffles hits all our high points. I am one of those who use recipes as a place to start, not stop. I soaked a whole grain mixture of bulgar, red rice and other grains overnight, then used whole wheat flour. My hubby likes bacon in his waffles, so after cooking the bacon I added coconut oil to make 1/3 cup. I used stevia in place of sugar, but otherwise made these pretty much as written. We have been looking for something for breakfast beyond eggs and love these waffles. I will be making these more often, and can see them being a big hit with guests. Thanks so much. Good stuff.

Says it makes 8 servings. I followed the recipe to a T and it made watery batter, so thin floppy waffles, and only 6 on a small circle iron. I ended up adding 1/2 cu. more flour and 1/2 tsp. More baking powder halfway through bc they were soooo floppy, despite turning my iron heat way up. They are yummy but need tweaking.

Best waffles ever! I use the blend tec blender to grind the wheat berries into flour. I also use honey instead of sugar. My whole family love them even my anti whole wheat kiddos.

Excellent recipe. All I had was pastry flour and these came out light and fluffy with a crunchy exterior. I wouldn’t change a thing. No, it didn’t make that many waffles but i’m guesing you can always double the recipe.

These are fabulous — probably the best home made waffle I’ve ever had!! I followed the recipe except: I increased vanilla to 1 tsp., and (as others have done) I substituted light brown sugar for the white sugar. A very simple and basic recipe that you can twerk in many ways; I used butter milk and coconut oil and they came out crispy on the outside and fluffy on the inside. I also added a 1/4 tsp coconut extract along with the vanilla extract. I might use brown sugar next time just to liven up the flavor, maybe use a bit less flour. All in all, a great go to recipe for waffles.

First time I made this exact to the recipe and they were great (made 6 waffles). Since then I’ve been asked constantly by the family for more….so each time, I do something a little different. Like adding bacon chopped fine and sub brown sugar for the white sugar. Variations include adding flax meal, hemp hearts…but always turn out nicely and make a nice crisp waffle.
