Amazing pancakes like these! Despite using whole wheat flour, I prepared them for my family one morning, and they came out fluffy and delicious!

Ingredients
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons vegetable oil
- ½ cup whole wheat flour
- ½ cup whole wheat pastry flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup semisweet chocolate chips
- cooking spray
Instructions
- Combine buttermilk, egg, and vegetable oil in a bowl. Mix in flours, baking powder, baking soda, and salt. Stir in chocolate chips.
- Spray a skillet with cooking spray and heat over medium heat. Working in batches, spoon or pour 1/4 cupfuls of batter onto the hot skillet. Cook until bubbles form and edges are dry, 2 to 3 minutes. Flip and cook until golden brown, about 2 minutes longer.

These are great pancakes! I used all regular whole wheat flour instead of the combo of with pastry flour–and they still turned out great! I like that there’s no added sugar (other than from the chocolate chips), so it allows you to pour the syrup on without overdoing the sweetness. These were really fast to make too–20 minutes from start to finish. I also got 9 pancakes out of this using a 1/4 cup measure. I would definitely make these again! Thanks for the recipe!
