Ingredients
- 1 ¼ cups whole wheat flour
- 2 teaspoons baking powder
- 1 egg
- 1 cup milk, plus more if necessary
- ½ teaspoon salt
- 1 tablespoon artificial sweetener
- ½ cup blueberries
Instructions
- Sift together flour and baking powder, set aside. Beat together the egg, milk, salt and artificial sweetener in a bowl. Stir in flour until just moistened, add blueberries, and stir to incorporate.
- Preheat a heavy-bottomed skillet over medium heat, and spray with cooking spray. Pour approximately 1/4 cup of the batter into the pan for each pancake. Cook until bubbly, about 1 1/2 minutes. Turn, and continue cooking until golden brown.
- You may need to use more milk than 1 cup. The batter should be thin enough so that it pours, but not so thin that it’s runny. We find that 1/4 cup additional milk is about the maximum needed.

Easy to follow, but the pancakes probably needed more sweetener to stand on their own. Not gonna knock the recipe because I probably screwed that up!
Very good! I tried making these and they turned out great! A bit dense but the blueberries pop in your mouth with each bite! One thing I recommend doing is not mixing the blueberries in with the batter, but pouring your pancake on the pan and adding your blueberries on top!
Super easy to make and fluffy. I’m going to mix 1/2white and 1/2 wheat next time.
Nice recipe! For fluffier pancakes, separate the egg whites and beat them into soft peaks. Then fold that into the batter. This is a keeper..
I must admit I wasn’t expecting something that sounds so healthy to taste so good. I used unsweetened almond milk. I just kept pouring until the batter was the right consistency. I will also use a little less sweetener next time. I found 1 tbsp a bit much. Maybe 2 tsp.

Its a great base recipe. I like to spice things up a bit. Because its whole wheat, I added some vegetable oil. I’ve also added sugar, cinnamon, and a splash of amaretto as my flavoring. Adjust to your taste. Then topped it off with some additional blueberries and bananas! Cheers from the Caribbean!
These pancakes were a little on the bitter side for my taste. They are hearty and turn out nice, but the flavor didn’t win me over. I think the whole wheat with the 2 tsp of baking powder might be the issue . So as a base recipe I would recommend trying it and tweaking to your preferences. I would suggest adding vanilla and more sugar/sweetener.
We loved them! I added shredded coconut, sliced almonds, cinnamon and nutmeg. I also added regular sugar and more blueberries. I cooked them using coconut oil and they were a hit!
I added melted butter to the batter and I used coconut milk. I think that you might want to add more liquid to your batter. I used a half cup more milk than the recipe. I also used more blueberries than the recipe.
I substituted 1/4 of a banana for the sweetener and soured the milk with a tablespoon of lemon juice. They were thick, fluffy and very delicious!

It definitely needs more milk than called for, 1 1/2 cups. We added pecans and did not use butter in the pan.
We loved this recipe! My husband requested these as our go to recipe! I did use 2 tablespoons of brown sugar instead of called for sweetener.
I added cinnamon, nutmeg, a squeeze of lemon, Mexican vanilla, and about one tablespoon of melted butter, they were so moist and tender, just delicious! I a served them with sliced strawberries and whipped cream yum.
My kids love these pancakes and don’t care that they are made with whole wheat flour. I add 1/2 of semi-sweet chocolate chips for a touch of delicious chocolate gooeyness. Delicious!

This is a wonderful recipe! I always substitute a tablespoon of sugar for the artificial sweetener, and add 2 tablespoons of melted butter.
