Ingredients

  1. cooking spray
  2. 8 frozen hash brown patties
  3. 4 cups shredded Cheddar cheese
  4. 1 pound cooked ham, cut into cubes
  5. 7 large eggs
  6. 1 cup milk
  7. ½ teaspoon salt
  8. ½ teaspoon ground mustard

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish with cooking spray.
  2. Arrange hash brown patties in the prepared baking dish. Sprinkle Cheddar cheese and ham over patties.
  3. Whisk together eggs, milk, salt, and mustard in a large bowl until well combined; pour over ham. Cover the baking dish with aluminum foil.
  4. Bake in the preheated oven for 1 hour. Remove foil and continue baking until the edges are golden brown and a knife inserted into the center comes out clean, about 15 minutes more.
  5. You can substitute 2 cups bacon or sausage for the ham if desired.

Made this the night before, refrigerated overnight, and added alittle Cayenne. Used Simply potatoes instead of hash browns. Cooked with foil on for 1 hour and 30 minutes uncovered. It was perfect.

Absolutely delicious! After reading some reviews and seeing several comments about this recipe being a bit bland, I revised as follows: Made with bacon (precooked) 2 cups of cheese Seasoned hashbrowns heavily with Clubhouse “Vegetable” Seasoning Added chopped red peppers and sliced mushrooms Added a sprinkle of cayenne pepper to egg mixture It was bursting with flavour!

Some may say it’s bland, but when you have kids that are picky eaters and don’t like bold flavors, this recipe is awesome! I’ve cut the cheese in half and make it every Christmas morning. Easy peasy.

This was so good. Yes, I did tweak it a bit but I could see where the recipe as written would be just as good. I did half a bag of potatoes O’Brien, added another egg, used 1/2 milk and 1/2 half and half and used a pound of bacon rather than ham. I also added onion powder, pepper and some garlic salt with dash of cayenne. Everyone raved. So simple too. I love how the potatoes on the bottom get nice and crispy.

I made this for overnight guests. I assembled the casserole the evening before, covered and refrigerated it. In the morning I took it out, preheated the oven, added some fresh ground black pepper on top and popped it into the oven, cooking per the instructions. It came out great! Everyone seemed to really enjoy it, even helping themselves to seconds.

I love this recipe and make it quite often. It’s quick, easy, and is a big hit with everyone who eats it every time. The few changes I make are using two cups of cheese instead of four (you don’t need that much, and I’m from Wisconsin!), using bacon for the meat, and using nine eggs instead of seven.

I’ve been making this for years since I found it on Pinterest. I have never used ham but have made it with sausage, chorizo and bacon and each one is fantastic. You do NOT need to precook the hashbrowns. Maybe the other reviewer felt that way bc of adding veggies which adds addtl moisture. My favorite is maple sausage for this recipe.

this was so easy to make and will make again. I did like others and added to the recipe. I sauteed onions, bell peppers, mushrooms, and spinach. Added Jimmy Dean sausage. Absolutely delicious.

I couldn’t find the potatoes, so I bought a 32 oz package of shredded hash browns, frozen. I used half of them on the bottom of the casserole, and made the dish as the recipe states except I put 2 small cans of diced green chiles (mostly drained) into the egg mixture. It did take another 15-20 minutes of cooking time to set in the middle. Very tasty and still great as leftovers. I will make this again for dinner as well as breakfasts as we all loved it.

I did a vegetarian version with 2 bell peppers, tomatoes and zucchini and didn’t have mustard so substituted with Italian spice mix. Was an enormous hit at family brunch. Will definitely make again. It needed 15-20 mins longer in the oven, probably due to the water in the veggies. Also made a second smaller version for my son with zucchini and puréed cauliflower. Left all other ratios the same. Did not need any extra bake time and was also fabulous

I didn’t make any changes, and I should have. There wasn’t very much flavor in it. Next time I will add seasonings such as basil, onion/garlic powder.

This was absolutely delicious! We’ve tried many breakfast bakes and this one was so easy and flavorful. We used fresh baked chopped bacon in place of ham and prepared spicy mustard in place of the ground mustard. Wonderful recipe. Thank you for sharing!

Great recipe and easy! I made for husband and myself so cut it basically in half and made in an 8 x 8 dish, using 5 eggs, 1/2 c. Milk, bacon instead of ham, 1 1/2 c. shredded cheese and added mushrooms, red onions and peppers since had them on hand. Have leftovers for tomorrow. Will make again.

I just made this for my family and it turned out great! I am definitely going to keep this recipe around. After reading several of the reviews, I added a tablespoon of biscuit mix to the egg mixture and it baked up perfectly. I also chopped and cooked a pound of bacon to use instead of the ham, and used a cheddar jack mix instead of just cheddar. My family loved it!

It’s definitely not healthy, but Sunday brunch is this morning casserole. I added sauteed onions, bell peppers and mushrooms, increased the egg count to 10 eggs and used 10 frozen hashbrown patties instead of 8. First time with this recipe. It’s good, but not great. I prefer my ‘Cheesy ham and hashbrown casserole’, which calls for a can of cream of potato soup and the shredded hashbrowns, instead of the patties. This would be great for a crowd. We will be freezing this in individual servings.
