A wonderful brunch item is bacon-topped egg cups. You can add different omelet contents to these as you choose.

Ingredients

  1. 6 tablespoons water
  2. 2 tablespoons flax seed meal
  3. 1 cup rolled oats
  4. 1 ¾ cups soy milk
  5. ½ cup all-purpose flour
  6. ½ cup whole wheat flour
  7. 2 tablespoons canola oil
  8. 4 teaspoons baking powder
  9. 1 teaspoon vanilla extract
  10. 1 tablespoon agave nectar
  11. ½ teaspoon salt

Instructions

  1. Preheat a waffle iron according to manufacturer’s instructions.
  2. Stir water and flax seed meal together in a bowl.
  3. Blend oats in a blender into a flour-like consistency. Add flax seed mixture, soy milk, all-purpose flour, whole wheat flour, canola oil, baking powder, vanilla extract, agave nectar, and salt to oats; blend until batter is just mixed.
  4. Ladle 1/2 cup batter into preheated waffle iron. Cook the waffles according to manufacturer’s instructions until golden and crisp, about 5 minutes.
  5. I melted 2 tablespoons spreadable fruit (fresh would work too) with 1 tablespoon agave nectar in a small saucepan. This, plus a sprinkle of powdered sugar, made it taste like it should not be good for you.

This is the best vegan waffle recipe! It’s crispy on the outside and not too soft on the inside. The flavor is amazing! I barely used any topping because the waffles were so good all on their own. Just a drizzle of honey and I like to add sliced strawberries. Both me and my husband loved it! I didn’t have agave nectar so I used pure maple syrup instead. I cannot say enough good things about these. I froze the leftovers and heated them up in a toaster a few days later. Still amazing!

I was doing a practice run when I had to cook for a vegan friend. The batter was very thick and dry. I can barely pour it onto the waffle iron. And when it was done it stuck! I’ve never had to clean my iron more than simply wiping it but I had to do a lot more today! Worse thing was my kids did not like it unless they drowned it in syrup which they typically do not need. These waffles were a bit thick and dense. It was okay at best but not worth all the trouble. I do not know if all vegan waffles taste this way? If you are not vegan, don’t try these.

Delicious!!! Sleepover of teenage girls ate up the double batch! Added additional cinnamon as I love that spice other wise the recipe worked great definitely recommend this and will be using again.

My waffle iron cooks this perfectly, just make sure to use canola-oil cooking spray on the iron so it doesn’t stick to the grid! I added peanut butter on top to make this even more delicious.

These were very good. I did sub almond milk for the soy, also I used brown sugar instead of agave. I’ve made these twice-the first time I didn’t follow directions, but the second time they were very good. Will be my go to recipe.

Love these waffles. I did make a couple changes though. I omitted the Canola Oil. I used Coconut Almond milk in place of the soy. I added Apple pie spice, to taste. Came out Awesome

Great recipe. My hubby and I are following a whole foods, plant based diet that does not include oils, so I made a few changes. I swapped the oil for a mashed banana. I doubled the vanilla, and swapped the agave for maple syrup. The batter was not the right consistency with my substitutions, so I added about a 1/2 cup or more of water. I started the recipe with hot water and allowed the water and flax meal to rest for about ten minutes before combining the mixture with the rest of the wet ingredients.

These were the bomb! I actually like these better than traditional waffles. They come out crisp and full of flavor! Plus they are so easy to make, just throwing it all in the blender. We don’t use syrup, but sliced bananas on top was heavenly. My teens agree, this is our new go-to waffle recipe.

Let me say first I had to change this recipe a bit due to needing it gluten free. I really cannot say how I liked it as stated. I gave it three stars because it gave me the basic recipe and I wanted to tell others that you can use a Gluten Free flour blend in place of both the wheat flour and the regular flour and have them come out great. Also used 1 1/2 tablespoons of sugar in place of the Agave. Made them for my grandson who must be egg free and gluten free and my grand daughter who must be dairy free!
