Vegan Chocolate Banana Oatmeal

The perfect Christmas table centerpiece is a cookie tree. You can make cut-out cookies using either my recipe or your preferred one. All you need are various-sized star-shaped cookie cutters.

Ingredients

  1. ¾ cup cashew milk
  2. ¼ cup quick-cooking oats
  3. 1 teaspoon unsweetened cocoa powder
  4. 1 pinch salt
  5. 1 pinch ground cinnamon
  6. 2 teaspoons maple syrup, or more to taste
  7. 1 tablespoon vegan dark chocolate chips
  8. ½ banana, sliced

Instructions

  1. Pour cashew milk into a saucepan and bring to a boil over medium-high heat. Add oats and reduce heat to a simmer. Stir in cocoa powder, salt, and cinnamon until well combined. Sweeten with maple syrup. Simmer for 5 minutes. Add chocolate chips, stir, and cook until oatmeal has desired consistency, 1 to 2 minutes more.
  2. Pour oatmeal into a bowl and top with banana.
  3. I have also used almond milk instead of cashew milk.

Great – I didn’t have chocolate chips so I chopped up a piece of dark chocolate instead. Also used almond milk. My daughter loved it
