Ingredients
- 2 pounds ground turkey
- 1 tablespoon brown sugar
- 2 teaspoons kosher salt
- 1 ½ teaspoons ground black pepper
- 1 ½ teaspoons ground sage
- 1 ½ teaspoons ground thyme
- ½ teaspoon dried marjoram
- ½ teaspoon red pepper flakes
Instructions
- Mix together turkey, brown sugar, salt, black pepper, sage, thyme, marjoram, and red pepper flakes in a bowl until well combined. Shape turkey mixture into patties.
- Working in batches, fry patties in a large skillet over medium-high heat until golden brown and no longer pink in the center, 6 to 8 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Oh my!! Wow this recipe is really good! My turkey sausage came out juicy, well seasoned I added a touch of maple syrup it’s was simply yummy and a tablespoon of olive oil, I didn’t have marjoram so it was fine ! Its perfectly season no need to add more salt or spices . I recommend
Loved this so much!!! I didn’t have thyme, and instead added a bunch of caraway seeds which brought it up a whole other level!!!! Oh – and air fried to keep them as healthy as I could!
Delicious! I added 2 tbsp. oil and 1 tsp. garlic powder. I omitted the brown sugar. Used a digital meat thermometer. I will be making this recipe for breakfast from now on!
Nice recipe I’m weening off bacon and other pork. I would suggest blending the spices first then sprinkle it over the meat to blend in. If you use ground Turkey breast vs ground Turkey it will be dryer. Consider add a tablespoonful of olive oil. I used fresh sage and added minced scallion (green and white), smoked Paprika and garlic powder. Made Patties and wrapped in wax to place in freezer.
This was really good. I think I will cut back or leave out the sugar next time. It wasn’t bad, just not my taste preference. Good job, thanks for sharing!
Followed the recipe except halved the salt and I must admit that this is worlds better than store bought turkey sausage. Will definitely make again.

I am a long time heart patient and try to eat healthier. This was so yummy I will not miss pork sausage again. I followed recipe and it was exactly as I hoped!!
I half this recipe and use it for breakfast sandwiches on a English muffin.
I am definitely not a fan and wont make this again. I added a little extra sage because it didn’t seem very strong in the mix. BAD IDEA! I also combined turkey with pork to give it some more moisture. I will looking for a better recipe!
Super easy and yummy!
I made a half recipe, and used 1T maple syrup instead of brown sugar. Turned out great! This went into an egg/English muffin/cheese sandwich. Tasty! I think these would mix well with sweet potato in hash. Going to try that tomorrow. 🙂
Very tasty. I’d probably just leave the sugar out next time because I didn’t feel it was needed and I didn’t care for the added sweetness. A good balance of seasonings otherwise! I got 16 smaller patties out of this recipe.
Definitely a keeper. Used it in a pasta dish and it was perfect. I did add a little bit of fennel and fresh onion.
I was very excited to try this recipe as pork sausage and I don’t agree all that well. I’m pleased to say, it was a great experience and the sausage was so tasty and aromatic! I left it mixed together in the fridge overnight to let the flavors permeate and it really added to it. I adjusted the salt and pepper amounts per another user’s suggestions, reducing them by 1/2 a teaspoon. I don’t like to change up recipes the first time I make them so I can enjoy them as they are. They cooked up great, had good texture, and were delicious. My only complaint is the salt content. Even after reducing the salt amount by 1/2 a teaspoon, I couldn’t eat much. This is not to say that the recipe was badly directed with the salt content! I think there are lots of people who would be very happy with it. My household and I are just particularly sensitive to salt content, which is why I’m not detracting from the rating at all. It’s simply personal taste at play. I’m excited to make this again, but with a bit less salt! 🙂

It tastes really good, however, it was a little bit dry because I used 93% lean.
Turkey needs more seasoning, especially if you have a salt restriction so when I make this I halved the meat and keep the other seasoning amounts the same. The target audience loves it since salty sausages have been off the dietary allowance for quite some time.
Fantastic recipe! I made it as written with 99/1 ground turkey and it was delicious.
I loved it. I used organic regular sugar which has a hint of brown sugar flavor. I will make again and give ground pork a try.
