Ingredients

  1. 2 cups all-purpose flour
  2. 2 tablespoons white sugar
  3. 2 teaspoons baking powder
  4. 1 teaspoon baking soda
  5. ½ teaspoon salt
  6. 2 cups low-fat buttermilk
  7. ⅓ cup melted butter
  8. 2 large eggs, lightly beaten
  9. 1 teaspoon vanilla extract

Instructions

  1. Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl until evenly combined.
  2. Whisk buttermilk and melted butter together in a separate bowl; whisk in eggs. Stir buttermilk mixture into flour mixture until just combined and batter is slightly lumpy; stir in vanilla extract.
  3. Preheat a waffle iron according to manufacturer’s instructions.
  4. To cook each waffle, pour enough batter into the preheated waffle iron to reach 1/2 inch from the edge. Cook according to manufacturer’s instructions.
  5. You can heat the oven to about 250 degrees F (120 degrees C) to 275 degrees F (135 degrees C), and place a rack on a baking sheet to keep waffles warm as you make the whole batch.

This waffle batter was a breeze to whip up. As I am one to have a preference to a thicker batter I could tell I was going.to.need to drop one of the liquids down. I chose to drop the butter to 1/4 c and it was perfect for us. They fluffed up great and have a great tasty. Will definitely make these again.

I whipped these up this morning (a school day at that) and they were easy and delicious! Followed the recipe exactly and the only slight change I made was to add a bit of cinnamon and nutmeg. Everyone in the house loved them, even my disgusted who isn’t so keen on waffles. This recipe is a keeper!

This is a super-easy recipe, not much more work than the premixed boxed versions. I may have accidentally doubled the vanilla, which isn’t a bad thing. Next time I may sub a little flax seed meal or whole wheat flour for some of the white flour. It made six 8” round waffles.

Excellent recipe. I substituted 1/2 cup of all-purpose flour with whole heat. Enjoyed these waffles very much. I experimented and substituted 1/2 cup of all-purpose flour with whole wheat for a little added nutrition and body. May add more next time. I found that getting the waffles to medium brown resulted in extremely internally tender waffles. If I went beyond that they could lose too much moisture and become tough. This will be a go-to recipe.

My family love these waffles! For a little bit of backstory: My parents love having Eggo waffles as part of their breakfast rotation. After having half a carton of buttermilk left and not knowing what to do with it, I looked for the easiest recipe with the pantry staples I had on hand. These waffles came into play. I made a batch of these and cooked them on my Dash mini waffle maker, then left them in the freezer and labeled them “homemade eggos”. My parents loved them, and immediately asked for more with different flavours! I’ve made these using chocolate chips, dried blueberries, freeze dried strawberry powder, and cinnamon, and all have turned out amazing! They heat up incredibly quickly and well in the toaster oven also!

I made this recipe exactly as is (except double vanilla because I love vanilla), and was watching to see if it would be too thin as one reviewer mentioned, but found it actually a little too thick, and as a result my first batch of waffles were a bit to doughy. But after that I spread them more around my very old fashioned rectangle waffle maker before I closed it and made sure to fully cook them and they were really delicious! Served them with sliced bananas and warm maple syrup. Look forward to toasting the leftovers

Nothing fancy, I followed the recipe verbatim and this produced a nice basic waffle. Next time I might add some maple syrup to batter instead of the white sugar or a hint of nutmeg. I surely will use the recipe again!

This is our go-to waffle recipe! I now make it from memory, and I thought I was following the recipe exactly, but I just realized that I actually double the vanilla when I make it 🙂 It’s delicious with doubled vanilla, haha! I also like to let the batter rest maybe 2-3 minutes after everything is mixed before I cook the waffles sometimes.
