This inexpensive dish, which hails from North Sumatra (Padang or Minang), is readily available from several street vendors (warung nasi). I discovered a shortcut to prepare this beautiful dish while I was studying overseas. Serve with prawn crackers on the side and hot, steaming rice or Indonesian fried rice (nasi goreng).

Ingredients
- 1 cup vegetable oil for frying
- 6 hard-boiled eggs, shells removed
- 6 red chile peppers, seeded and chopped
- 4 cloves garlic
- 4 medium shallots
- 2 tomatoes, quartered
- 1 teaspoon shrimp paste
- 1 ½ tablespoons peanut oil
- 1 tablespoon vegetable oil
- 1 teaspoon white vinegar
- 1 teaspoon white sugar
- salt and pepper to taste
Instructions
- Heat 1 cup oil in a small saucepan over medium-high heat. Deep fry the eggs in the hot oil until they are golden brown, 5 to 7 minutes; set aside.
- Combine the chile peppers, garlic, shallots, tomatoes, and shrimp paste in a food processor; blend into a paste. Add in peanut oil. Process again until smooth.
- Heat 1 tablespoon oil in a large skillet over medium heat. Pour the chile pepper mixture into the skillet. Stir the vinegar, sugar, salt, and pepper into the mixture. Add the fried eggs to the mixture, turning to coat. Reduce heat to medium-low; simmer until fragrant, about 5 minutes.

My husband is Indonesian, and I myself spent 10 years working there. There are a lot of Indonesian foods I miss, telur balado being one. This recipe was quite good, but I added serai (lemon grass), daun jeruk (lime leaves) & kemiri (candle nuts) to the sauce & a little more cuka (vinegar). That’s the way I’ve always seen it made, and Indonesian recipes can vary a lot from area to area. Pretty good, although I had to use half the chili peppers recommended, we ate everything pretty fast. I’ve lived in Indonesia a long time ago and so I wanted to recreate some dishes from there for my fiance, he LOVED this dish! He constantly asks me to make it again, I don’t usually have shrimp paste where I live so I use anchovies instead (I looked it up as a substitute for shrimp paste) and it works just fine.
Hot sauce…very different but not bad.
