Ingredients
- 2 ¼ pounds quark cheese
- ⅔ cup all-purpose flour, sifted
- ¼ cup white sugar
- ¼ cup raisins, or to taste (Optional)
- 2 eggs
- ½ teaspoon baking soda
- ¼ teaspoon vanilla extract
- 2 pinches salt
- ¼ cup all-purpose flour, or as needed
- ¼ cup vegetable oil, or as needed
Instructions
- Strain or process quark cheese through a sieve or meat grinder to achieve a powdery consistency. Mix quark cheese, 2/3 cup flour, sugar, raisins, eggs, baking soda, vanilla extract, and salt together in a bowl until batter is well mixed.
- Pour 1/4 cup flour into a small bowl.
- Roll batter, about 2 tablespoons per serving, into a ball and roll in flour until coated. Flatten each ball into a 2-inch patty, squaring off the edges.
- Heat about 1 1/2 tablespoons oil in a skillet over medium-low heat. Fry patties, working in batches, in the hot oil until dark brown and a shell has formed, 3 to 4 minutes per side. Transfer to a paper towel-lined plate. Repeat with remaining oil and patties.
- For some, the amount of white sugar and vanilla extract is not enough. If you have a serious sweet tooth, I would add double the vanilla extract and 2 more spoons of white sugar.
- Substitute tvorog or cottage cheese (drained and no added sugar) for the quark if desired.

Since my children were adopted from Russia, I wanted to try this recipe. I used Farmer cheese and did not sieve it nor run it through a grinder. I watched videos on youtube and nobody did that! One video added a little vinegar with the baking soda, so I did that, too. I halved the recipe because I only had 1 pound of Farmer cheese, and it made about 10 small pancakes. I did not add raisins. I served it with blueberry sauce and sour cream. It is very good!
I didn’t have enough quark made so had to base how much flour used on that. Your recipe is perfect. Instead of 2 eggs, I used 1 (because I have made Syrniki before and didn’t have an egg and learned to substitute 1c of spplesauce for the egg)- and 1 c of applesauce. Best Syrniki I’ve made, glad I lost the original recipe for it!!! Thank you for sharing this!
I altered the recipe for my diabetic needs (no sugar and used raspberries and blueberries instead of raisins only because I didn’t have raisins), but this was very good! Made it several times.
This was a great breakfast treat for the family. I used cottage cheese and dried cranberries. I had trouble dredging the cakes in flour before putting them in the skillet, eventually I got the hang of it. This dish is served best with berries and powdered sugar. My husband and kids put syrup on theirs, but I thought that made it too sweet.
These are soooo good! Their texture is just perfect. Every time you buy them in the store it a hit or a miss. With these you never miss. Syrniki are the ones that used to traditionally be the weekend family breakfast…but this recipe beats even my mom’s. Well done! Thank you, Kangaroo!
