An improved version of a long-standing family favorite. The batter must be thin enough to pour, yet thick enough to spread.

Ingredients

  1. ½ cup plain soy milk
  2. ½ cup water
  3. ¼ cup vegan butter, melted
  4. 2 tablespoons maple syrup
  5. 1 teaspoon vanilla extract
  6. 1 cup spelt flour
  7. 1 tablespoon white sugar
  8. ¼ teaspoon salt

Instructions

  1. Mix soy milk, water, vegan butter, maple syrup, and vanilla extract together in a bowl.
  2. Mix spelt flour, sugar, and salt together in a separate bowl. Mix soy milk mixture into flour mixture.
  3. Heat a skillet over medium-high heat. Pour batter into the center of the skillet and swirl so batter covers the entire bottom. Cook until golden brown, about 2 minutes. Flip and cook 1 minute more.
