Strawberry Vanilla Pancakes

My brother in Seattle made this salmon on a cedar plank for me. It is without a doubt the greatest fish I’ve ever had. I prefer to serve it with roasted asparagus and rice that is Asian-inspired.

Ingredients

  1. 1 cup all-purpose flour
  2. 2 tablespoons brown sugar
  3. 2 teaspoons baking powder
  4. 1 teaspoon salt, or to taste
  5. 1 cup milk
  6. 1 large egg
  7. 2 tablespoons vegetable oil
  8. 2 tablespoons vanilla extract
  9. 1 cup chopped fresh strawberries

Instructions

  1. Stir flour, brown sugar, baking powder, and salt together in a medium bowl. Pour in milk, egg, oil, and vanilla; mix until well blended. Stir in strawberries.
  2. Grease and heat a large skillet or griddle over medium heat.
  3. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 2 to 3 minutes. Flip and cook until browned on the other side, about 2 minutes more. Repeat with remaining batter.

I made them exactly as the recipe called for. I fried them in butter with vegetable oil. (We like crispy edges). Next time I will add a few more strawberries. DELICIOUS ‼️

I love this recipe…it’s a favorite. I make it just as it’s written and it’s fine. If I don’t have strawberries, I’ll just make them without. I also substitute blueberries sometimes.

These pancakes do taste delicious, I felt like several changes were needed though. For dietary reasons I used half oat flour, I cut down the sugar to 1 Tbsp – sugar in pancakes is mostly for color so you don’t need much, I used about 3/4 cup milk in part because I was using frozen strawberries, and didn’t want to add too much liquid. I defrosted 1 cup of strawberries, and mashed them. I also cut the vanilla down to 2 tsp, and it still tasted distinctly of vanilla. The batter was still pretty thin – on the thinner side of normal pancake batter, but as promised, they puffed up nicely when cooked, after letting the batter sit for a few minutes.

I made no changes, way too much salt and baking powder. I could taste it, really didn’t care for the brown sugar flavor, thin batter that didn’t rise even with so much baking powder. I would never make these again,

The only fault I have with this recipe is that the pancakes tasted VERY salty. I doubled the recipe and made it as written except I did cut back the milk by about a 1/4 cup. They were nice and fluffy and had a great vanilla flavor. Next time I’ll just cut the salt by half

I really love this recipe! I only use 1 Tbls of vanilla and do everything else as listed. A nice fluffy pancake for the weekend!

I used blueberries instead of strawberry s . They turn out really good . My son-in-law , daughter & grandkids enjoy them a lot . This year I’m thinking about using pineapple & cherries in them . My daughter B-Day is on the 4 th of July . That will be a special B-Day breakfast for her this year .

I used coconut oil and heavy whipping cream instead of milk and vegetable oil. I also topped them with cream cheese. These pancakes are really good, though I strongly recommend using coconut oil!
