Strawberry-Banana Freezer Oatmeal

Are you pressed for time and cannot prepare breakfast? This dish is perfect for a quick but delicious breakfast. Oatmeal is ready with just a quick microwave session. Excellent meal preparation.

Ingredients

  1. 1 cup white sugar, divided
  2. 2 cups fresh strawberries, sliced
  3. 3 cups water
  4. 2 cups almond milk
  5. 2 ½ cups old-fashioned oats
  6. 1 ½ cups bananas, mashed
  7. 1 teaspoon cinnamon
  8. 1 teaspoon vanilla extract
  9. ¼ teaspoon salt
  10. ⅛ teaspoon ground nutmeg
  11. ½ cup pecans, chopped

Instructions

  1. Sprinkle 1/2 cup sugar over sliced strawberries in a bowl. Let rest until juices have been released, 10 to 15 minutes.
  2. Boil water and almond milk together in a large pot. Add oats and cook over medium-low heat for 5 minutes, stirring frequently. Stir in strawberries, remaining 1/2 cup sugar, bananas, cinnamon, vanilla extract, salt, and nutmeg and remove from heat. Stir in pecans.
  3. Grease 18 muffin cups and fill each to the top with oat mixture, mounding a bit. Freeze 8 hours to overnight. Remove oatmeal from muffin cups and place in freezer bags or a freezer-safe container.
  4. Prepare 1 frozen oatmeal cup by placing in a microwave-safe bowl and heating in a microwave oven for 1 1/2 to 2 minutes.
  5. For thinner oatmeal, add milk. You can use any animal- or plant-based milk you like. You can slice the bananas instead of mashing, too.

These are so delicious. My kids love them. I made exactly like instructions. Now that the kids are back in school, this is an easy way for themto have a nutrisous brekfast.

My hubby made them and I really liked them. He thought they did not have enough flavor. I loved the subtle pecan flavor and the strawberries were great. The banana was subtle. We wrapped them in wax paper and taped them. Trying to reduce use of zip locks.

Just put it in the freezer. Licked the spoon and it was sweet. I did not use all the sugar and if I make again I will reduce even more. Will update when I actually eat it.
