I’ve been using this recipe for years, and it’s quite simple. Children love to lend a hand, and my five-year-old can do everything. Excellent idea to encourage youngsters to cook.

Ingredients
- cooking spray
- 3 egg whites
- salt and ground black pepper to taste
- ¼ cup chopped fresh spinach, or more to taste
- 6 cherry tomatoes, sliced
- 2 tablespoons crumbled feta cheese
Instructions
- Heat a skillet over medium heat and spray with cooking spray.
- Whisk egg whites with salt and pepper in a bowl. Pour egg mixture into the heated skillet and swirl until eggs cover entire bottom of skillet; cook for 1 to 2 minutes. Arrange spinach, tomatoes, and feta cheese in the middle of the eggs. Cook until edges of eggs begin to curl up, 2 to 3 more minutes. Loosen omelet from the skillet using a spatula and fold in half; continue cooking until cheese is melted, 2 to 3 more minutes.

I like to use 1 whole egg, beaten, and 3 egg whites. Beat the egg whites until soft peaks form n gently fold together. Halve the tomatoes and saute with a small amt. olive oil and as much garlic as you like; just to soften. Add spinach just long enough to soften, not really wilt. Stir in cheese. (I prefer goat cheese, but feta never disappoints.) Make your omelet w most of the filling inside and a little (or just more..) on top. Brunch or dinner for 2!
I am just finishing up my breakfast! a great omelet! I omitted the tomatoes and added only a pinch of salt as the feta cheese is salty enough. besides those tweaks for our family, it was a winner!

This is so good! I only added some cayenne because I like some heat and turmeric. This tricks the eye with adding some yolk color and is super good for you so I add it a lot when I cook. The 1st time I made it I put way too much tomato and spinach in so it didn’t look pretty but tasted great still! The second time I backed down a bit and it looks more omelette like.

GREAT BREAKFAST – but why just egg whites? What is wrong with the yolks? My chickens lay the best eggs…used the entire egg and it was awesome.
