Ingredients
- 2 cups water
- 1 cup oat bran
- 1 pinch salt
- ½ cup pumpkin puree
- 1 teaspoon ground ginger
- ½ teaspoon ground cinnamon
- ⅓ cup white sugar, or to taste
- ⅓ cup coconut milk, or to taste
Instructions
- Bring water to boil in a saucepan. Add oat bran and salt, reduce heat to medium-low; cook and stir until mixture begins to simmer, about 5 minutes.
- Stir pumpkin puree, ginger, and cinnamon into oat bran mixture; bring back to a simmer. Stir in sugar and coconut milk; cook and stir until mixture reaches desired consistency.

This was delicious! I had left over pumpkin and coconut milk and decided to give this recipe a try. I did halve the ginger and it was perfect. Filling and healthy breakfast. I definitely will make this again.
I liked this recipe, it is completely different to what I had before. The ginger is very powerful so next time I will cut the amount I use. The coconut milk and the pumpkin together make this delicious. I added more coconut milk to make less thick the mixture.
