Smoked Salmon-Asparagus Frittata

Ingredients

  1. 2 small yellow potatoes
  2. 10 eggs
  3. ½ teaspoon hot sauce (such as Tabasco®)
  4. 1 tablespoon chopped fresh tarragon
  5. 2 tablespoons chopped fresh chives
  6. 1 teaspoon lemon zest
  7. Salt and ground black pepper to taste
  8. 2 tablespoons olive oil
  9. ¼ cup diced red onions
  10. 1 cup asparagus, cut into 3/4-inch pieces
  11. ½ cup smoked salmon, broken into small pieces
  12. ⅓ cup shredded Gruyere cheese

Instructions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain and let cool.
  2. Whisk 10 eggs in a bowl. Add hot sauce, chopped tarragon, chopped chives, lemon zest, salt, and pepper to eggs and whisk.
  3. Preheat the oven to 375 degrees F (190 degrees C). Dice potatoes once cooled.
  4. Heat an ovenproof pan on medium-high heat and add olive oil. Add onions, potatoes, and asparagus to pan and saute for 2 minutes. Reduce heat to medium. Add egg mixture to pan. Stir in smoked salmon and Gruyere cheese.
  5. Bake in the preheated oven for 15 minutes or until eggs puff up. Cool for a few minutes and serve.
  6. Substitute Swiss cheese for the Gruyere if desired.

I think my “small” potatoes must have been too large because it was quite dry in our opinion. Way too potato-y Next time I will eliminate the potatoes and increase the amount of asparagus and cheese. I used canned smoked salmon and could hardly taste it. I hesitate to give it a low rating because the premise sounds so good and maybe I did something wrong.

Left out lemon zest and hot sauce. Will make again.

This was really good. I did cook the eggs a little to set some before putting in the oven. I made sure the frittata was done before taking out. Everyone loved it.
