Slow-Cooker Oatmeal with Apples

Ingredients

  1. cooking spray
  2. 32 ounces vanilla-flavored almond milk
  3. 1 ½ cups water
  4. 1 (15 ounce) can pumpkin puree
  5. 2 tablespoons pure maple syrup
  6. 1 tablespoon ground cinnamon
  7. ½ teaspoon salt
  8. 2 cups steel-cut oats
  9. 1 cup dried cranberries
  10. 2 tablespoons unsalted butter
  11. 1 ½ cups diced apple, or more to taste
  12. 1 cup chopped pecans

Instructions

  1. Lightly spray a slow cooker with cooking spray.
  2. Combine the almond milk, water, pumpkin puree, maple syrup, cinnamon, and salt in the slow cooker. Whisk to combine thoroughly. Add oats, dried cranberries, and butter.
  3. Set your slow cooker to Low and cook for 3 1/2 hours. Stir in diced apples and pecans. Continue cooking on Low for 2 more hours.
  4. Use firm cooking apples. I prefer Jonagolds. I leave on the skin for fiber and texture, but you can peel them as well.
  5. At the end of cooking, I spread out the oatmeal on baking sheets to cool and portion into individual servings and freeze.

Made this in the slow cooker on a rainy day at home. I only had unsweetened almond milk on hand. I added 2 Tbsp of vanilla extract and decided to add sugar to each bowl. Very good!
