Savory French Toast Casserole

Delicious, flavorful, and really simple to prepare casserole. Every component contributes in some way to making this casserole whole. This was made for the “Gang Up ‘Breakfast for Dinner’ Challenge,” and my family enjoyed it to pieces. Regards, Gitano.

Ingredients

  1. 1 (6 ounce) French baguette, sliced into 1/2-inch rounds
  2. 2 large eggs
  3. 2 medium red onions, finely chopped
  4. 2 medium tomatoes, cored and diced
  5. ½ cup chopped fresh mushrooms
  6. 2 cloves garlic, finely chopped
  7. 1 (1 inch) piece fresh ginger, finely chopped
  8. ½ cup grated Cheddar cheese, divided
  9. ½ teaspoon dried sage
  10. salt and ground black pepper to taste
  11. ¼ cup real bacon bits

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Arrange baguette slices in the bottom of a casserole dish.
  2. Beat eggs well in a bowl. Add onions, tomatoes, mushrooms, garlic, and ginger in a bowl. Sprinkle 2 tablespoons of Cheddar cheese on top and mix until well combined. Add sage, salt, and pepper. Pour egg mixture over the baguette slices and sprinkle with bacon bits.
  3. Bake in the preheated oven for 17 minutes. Sprinkle with remaining Cheddar and bake until fully melted, about 5 more minutes. Serve hot.
  4. The egg mixture could be poured over the bread slices and left to soak overnight before baking. Also, I think a bit of chopped green capsicum would do wonders to this casserole. The plus point is: you can tweak this to taste by popping in additions of your choice.
