Sausage Hash Brown Breakfast Casserole

This breakfast casserole with sausage and hash browns is incredibly simple to make and actually tastes fantastic. You should also try adding some onion.

Ingredients

  1. 1 pound hot pork sausage
  2. 1 cup milk
  3. 3 large eggs, beaten
  4. 1 ½ teaspoons salt, divided
  5. ½ (30 ounce) package frozen hash brown potatoes, thawed
  6. 1 cup shredded Cheddar cheese
  7. ½ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish or a 9-inch, deep-dish pie plate.
  2. Cook sausage in a large skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  3. Whisk milk, eggs, and 1 teaspoon salt together in a bowl.
  4. Transfer cooked sausage to a large bowl. Add hash browns, Cheddar, pepper, and remaining 1/2 teaspoon salt and stir to combine. Spread in an even layer in the prepared baking dish, then pour egg mixture evenly over top.
  5. Bake in the preheated oven until bubbling and golden, about 45 minutes.
  6. Keep the sausage and hash brown mixture separate from the egg mixture, and refrigerate both overnight. Assemble the casserole in the morning just before baking. You might need to cook it a little longer if it’s cold from the fridge.

After I cooked the sausage, I went ahead and cooked the potatoes with red peppers and onions. Then I put everything in a bowl and mixed together and cooked in the oven. It was a hit!

I make something similar, but in a a 9 x 13″ pan and use the hash browns like a crust. I add 1 egg, 1/3 cup shredded cheddar cheese and 1/2 tbsp coconut flour to the base, bake it for 30 minutes @ 425, then add mild sausage as a layer, then a layer of pico de gallo, then the cheese, and pour the egg mixture over the top & bake til the eggs are set… Or you could do the eggs & add the cheese on top.

This is a great basic recipe that needs a bit of tweaking. I’ve used it in many ways, like muffins and frying it on the stovetop. I added more eggs and plenty of spices, because potatoes and eggs need a lot of seasoning. I used it paella? like because of so many family allergies, browning the potatoes a bit before topping each section separately, pouring egg mixture last and adding the cheese on individual plates only for those that can tolerate it.

Good recipe as is, but A little bland for my family. I made the following changes and it was amazing: Used 5 eggs, used Jimmy Dean Sage ground pork, and 2 cups of shredded medium cheddar cheese. I chopped a half cup of onions and sautéed them and added them to the mixture along with 1 tsp of garlic powder. I also browned my hash browns a bit before adding them.

I always make a recipe exactly as stated the first time I make it…however, due to an ulcer, I didn’t use the spicy sausage, just regular pork sausage, but everything else was done as stated. My husband and I really liked this recipe and I don’t believe there is anything I would change. I used a deep small baking dish and baked as stated and it turned out perfect. I’ve already been asked to make it again next week.
